Soft & Fluffy Sourdough Cinnamon Rolls Recipe | No added yeast | No Egg | Sourdough discard recipe
I'll show you how to make soft and fluffy sourdough cinnamon rolls! These are some of the BEST cinnamon rolls you'll ever eat. They are beautifully caramelized on the bottom with tons of pillowy layers of cinnamon goodness. And they’re topped with the most delicious vanilla cream cheese icing. This recipe is prepared a day in advance so all you have to do in the morning is roll out of bed and bake them. These overnight cinnamon rolls also have no eggs in them!
Recipe (Yields 9 large rolls)
Dough:
Tangzhong roux - 25g bread flour (about 3 Tbs) + ½ cup (125g water)
¾ cup room temperature water
475g bread flour (about 3 cups + 3 Tbs, all purpose flour will work as well)
1.5 tsp salt
1 Tbs white sugar
¼ cup grapeseed oil
2 Tbs starter
Cinnamon filling
4 Tbs salted butter softened in microwave for 15 seconds
1/3 packed cup dark brown sugar
1 Tbs cinnamon
Cream cheese icing
4 Tbs of salted butter
4 oz cream cheese
1 cup powdered sugar or to taste
2 tsp vanilla paste or extract
Additional 2-3 Tbs butter to grease pan and brush on top of rolls right before baking
Bake at 325 deg F for 35-40 minutes, till tops are lightly browned

    Hi Rosie. I'm a late comer to your channel and I don't know whether you still monitor the comment section. If you do, I have a question about the starter used in the recipe. Your recipe calls for "2 tbsps of starter." Would you have a guess at how many grams that would be? I'm brand new to sourdough baking and I am more acustom to weighing the ingredients in grams. If not, no worries. Love your channel!

    Omg my now go to recipe! I’ve tried several others that were good but the fluffiness and ease of these was phenomenal. I did a refrigerator final proof overnight and let them come to room temp before cooking. I did let them cook in the oven a bit longer because they were so mile high! I might use a tad bit less salt next time and I used honey. Absolutely delicious, thank you!

    I’ve watched several videos anticipating doing a sourdough starter but here is the deal…..it requires more daily attention than did my infant offsprings…..how does anyone get to go on a week’s cruise? How does anyone suffer a heart attack and spend time in the hospital with sourdough mother screaming for attention? Hell no! I’ll just make my family happy with some yeast rolls that takes a one time devotion of about an hour.

      Hii! I actually don't weigh my flour and water for the starter but it's roughly 2-3 tablespoons of each to get a thick pancake batter like consistency. I hope that helps!

    This is my first attempt at sourdough. My starter looks great from what I can tell and I followed your directions to the letter but when I unveiled them this morning they had over-proofed and became a pan of dough. So discouraging, I think it was too warm in my house but I rescued several of them and I'm baking them now. Not expecting much but hoping to at least get a taste for what they might become. I'm not giving up and hoping the next attempt will be better.

      Hii Jan! I'm so sorry to hear that your dough over-proofed by the morning. My room temperature is about 66 deg F. If your home is warmer than that and especially during the summer time, you can let the dough proof overnight in the fridge instead. I hope next time works out better and thanks so much for checking out my video!

      Hiii! Thanks so much for checking out my video and that's a great question. My room temperature is about 66 deg F and I leave it out on the counter wrapped with beeswax paper for up to 3 days. Also, if I know I'm not going to finish the loaf in 3 days. I slice up the amount I'm not going to eat right away (usually half the loaf) and put it in the freezer. Just defrost at room temperature and it's almost as good as fresh baked. This bread, as well as all my other sourdough recipes, freeze really well. I hope that helps!

    Quick question: I just used regular organic spelt flour to make the dough. Should I have made any adjustments to it (ingredient measurements… rest times). Yikes. I wish I’d thought to ask this before I mixed the dough! I hope you happen to see this in the next six hours or so! Thank you.

      Hiii! I'm so sorry for my delayed reply but the organic spelt flour should have worked well with the recipe as is. However, different flours or even brands of flour can absorb different amounts of water so you might need a few tablespoons less water if the dough was too wet. I hope the bread turned out well for you!

    Neither myself nor my son had a problem with Gado’s use of “iota.” It wasn’t the usual, but it was legit. Synonyms are “jot” and “scintilla,” which can be used as Gadi did. Despite such critical attention to detail, or perhaps because it, makes these guys two of the sharpest tacks in the box.

    You don't NEED to feed your starter before using it BUT, it makes a much better loaf if you do. Just because it "works" doesn't mean it's equal in quality.

    Hi Rosie! I tried 3 times making your sourdough bread following your starter instructions and 3 times it did not work. I was ready to give up and threw out the starter. I really wanted to try again so I made another starter, baked another loaf of bread and it was wonderful! I just finished taking my English muffins out of the oven and can't wait to see how they turned out. I am so glad I didn't give up. Your cinnamon rolls are next on my list to try.     Hoping someone can answer this question before tomorrow morning. House is too warm to leave on the counter overnight. When I take them out of the fridge in the morning, do I let them get to about room temperature before starting to brown both sides ( and then put in the oven)? I’m looking forward to giving this a try

      Hiii! I apologize for the delay in reply. When you take them out of the fridge, you can let them sit out for about 20 minutes to take the chill off. They will usually still cook up well even if you don't have time to let them sit out first but letting them sit first will make them a bit more poofy.

      @@RosiesKitchenAdventures Appreciate the reply. First attempt = starter was too young = discard was too young. Placed in fridge. No overnight rise. No rise in oven. Second attempt = starter is active. Made with discard. Left o counter overnight = overproofed in the morning. Baked two of them anyway. Very little rise but definately baked through! Was like a pan bread. Extremely tasty. This is all my fault . Should have put the second batch in the fridge. I'm a novice. 100%. Looking forward to trying again in a week or so. I'm going to get this right eventually. Those English muffins look great!

      @@eoh8915 Thanks for the update! That's actually great progress and you are figuring out how to make the necessary adjustments along the way. When I was first learning about sourdough, I made dozens of loaves before getting a reasonably edible one so you are definitely on the right path!

    My great-grandmother made several loaves of bread every morning to feed her family on the farm in Indiana. I imagine she did something a lot like this. My grandmother told me that her mother measured the ingredients using a saucer as a scoop and a coffee cup and cutlery spoon for liquids. Loosey-goosey from necessity 🙂.

    Rosie, I bake the bread using 350g wholemeal flour, 100g bread flour, 50g multigrain (my multigrain doesn't look like flour but a mixture of wheat bran is and some seeds.). I usually add a teaspoon of instant yeast to my discard /unfed sourdough starter. But I omitted the instant yeast and follow your recipe. It turn out good, delicious and packed with healthy seeds. ❤🎉Tqvm

    1.) Any way to make this gluten free by using Gluten free sprouted Oat flour instead? If so any adujustments or add ins? 2.) Could this also work with using 1/2 sprouted buckwheat flour and half sprouted oat flour? adjustments? Would this taste good?

    Hi Rosie! On day 2 by the afternoon my starter tripled in volume but by the evening it deflated 😅. Any reason why? I’m on day 3 and fed my starter with 3 tbsp while rye flour and 3 tbsp filtered water. Thanks!

      Hii! That's so exciting that you are making your starter. Your starter sounds like it's coming along nicely and it's totally normal for your starter to deflate after being very active. You can give it an extra feeding once it's deflated if you happen to notice it then but waiting till the next morning is totally fine too. I can't wait for you to start baking with your new starter!!

    Rosie- where’d you get that cute spoon and your bread cutting knife? I’ve made this bread and it’s delicious and super easy. How long does a loaf last? I keep mine in the refrigerator. Thank you for sharing.

      Hiii! Thanks for checking out my video and I apologize for the delay in response. These are the wooden spoons I use for mixing my dough (affiliate link: amzn.to/3JjfgE4) but I unfortunately don't remember where my bread knife came from. I've had it way sooo long! I can usually get away with leaving the bread out at room temperature (about 66 deg F for me) for about 3 days but I believe it could last up to 5 days in the fridge. This bread freezes really well so I sometimes also slice up half the bread, wrap it in foil, and then freeze it. I hope that helps!

    Hi rosie, i just found your channel. And already tried your sourdough english muffin recipe. It was insanely good! And today i'm going to try your roll's recipe for my dinner. And this loaf's recipe definitely my next project. LOL. I am sooo happy that i found you. Your recipes are sooo easy for me as a beginner with sourdough. I don't even have any dutch oven and so on. But i do have loaf pan since i baked a regular loaf before. I was scared to use sourdough before. U just saved my life😂 sorry for my bad english. I'm your subs from Malaysia. ❤

You can use the same amount of multigrain flour but you might need a bit less water since different flours absorb different amounts of water. Please reserve ¼ cup of the water and add it in a spoonful at a time until the dough comes together. Be well and happy baking!

      If your sourdough is too sour, take out a portion, and feed that portion in equal ratio. That will reduce the 'sour'. Use it later the same day or next. Don't wait too long...or the acidity will take over again.
