Will be trying your bagel recipe next. 🙂 For those wondering the metric equivalents, I used: 500g flour (I used AP) 275g water (55% hydration) 30g oil (I used avocado) 25g sugar (I used honey) 30g cold unfed stater from fridge 10g of salt (This is lower than what the recipe calls for at 2 tsp) And I used durum semolina flour for dusting (just didn't have cornmeal on hand) Followed the directions as outlined by Rosie.

This was the first recipe I've seen where the muffins had some air bubbles. The rest just look like bread in the shape of an English Muffin. I want an English Muffins that has air bubbles, nooks and crannies. I'm going to try this one tomorrow.

These English Muffins turn out great! I've already made them three times. I'm a new baker and the recipe was really easy to follow. Also, this recipe ends up making BIG muffins, so they're perfectly sized for a sandwich.

My husband said they were the best English muffins he’s ever had. Next time I will let them do their final rise on a tray covered with a tea towel. The muffins stuck together and stuck to the pan. Fun fact: Half of the contestants on the Great British Baking show failed at the English muffin challenge. I can’t believe I just made perfect ones!! Thanks Rosie!

Well , I finally gave up @3 AM this morning & left my dough out, praying it would still be OK. Woke up this morning & it was sooo puffy& beautiful with big air bubbles! I'm about to try my first batch using your suggestion! I've a lot of baking experience in general but never tried sourdough before. I'm confident I can get your same results if you share more specifics on your methods. How long did you cast your prayer for and what temp did you have your house set to? Did you use a specific pre approved prayer, or did you use a custom-made one? If custom made, would you mind sharing the relevant details like position (sitting or kneeling) location (is kitchen okay, or should I go to the foot of my bed) and the verbal ingredients as well as any body motions (is some form of dancing needed, or repeated prostration) that are required for the casting of the prayer to be correct? Should I wait until 3AM my local time to offer up that prayer, or do you suggest playing it safe and casting my prayer at 3 AM your time? If the latter, can you tell me what your time zone is? Or...now that I re-read it...did you cast it starting earlier than 3am and times it to FINISH at 3? If so, what time did you start the spell and can you maybe post a video that shows the pace at which you spoke during the prayer casting? Also, if I can't schedule the prayer portion of the recipe at the correct time, what extra work (or ingredients) should I use to compensate for the lack of properly timed casting? Is it really just more efficient to cover a portion of the ingredients, experience, and labor to go with the prayer route, or can you provide the modified recipe that compensates for the missing ingredients or preparation steps if there is not enough time for this spell? Thank you SO much for any help you can offer! Oh! Last thing... Which god do I appeal to when casting this spell and do they require any kind of offering beyond my devotion and praise?

I'm sorry I'm replying to your post but I'm doing so because you're the most recent poster. There is one thing I'm not very clear on. Do you do two or three "let rise 3-4 hours" sessions? Here are the timings from the video: 8:16 - Mix all ingredients together and let rest for one hour 9:16 - Knead the dough to get rid of all the clumps and then "let rise 3-4 hours" 12:49 - Do gentle folds and "Proof 3-4 more hours and repeat another set of folds" This should take us to around 3:45 pm but her video jumps to 6:14 pm so it seems that at around 3:45 we knead the dough and let rise another 3-4 hours. That's the only way we get to 6:14 pm. Is this correct?

Loved these! I used honey instead of sugar and they were delicious. I set them in the fridge overnight, they sat in the fridge for about 14hrs. I cooked just as you said then I put them in my air fryer (350 for 8min) they were perfect. Thank you so much!

Hi Rosie! I tried 3 times making your sourdough bread following your starter instructions and 3 times it did not work. I was ready to give up and threw out the starter. I really wanted to try again so I made another starter, baked another loaf of bread and it was wonderful! I just finished taking my English muffins out of the oven and can't wait to see how they turned out. I am so glad I didn't give up. Your cinnamon rolls are next on my list to try. Omg my now go to recipe! I’ve tried several others that were good but the fluffiness and ease of these was phenomenal. I did a refrigerator final proof overnight and let them come to room temp before cooking. I did let them cook in the oven a bit longer because they were so mile high! I might use a tad bit less salt next time and I used honey. Absolutely delicious, thank you!

Thank you, Rosie! I’ve been wanting to make SD English Muffins for so long, but it always felt like it would be too much work-I was intimidated! I used your recipe to make these, only I added the last of my fed starter from an earlier bake & it was like 1/2 cup. Didn’t wanna toss it lol. I got so tired last night that I had to let mine bulk ferment in the stand mixer bowl overnight w/plastic wrap covering it. I woke up with a pleasant surprise of beautifully doubled in size soft pliable dough! 😍 Mine was a bit sticky so I floured my table to knead it (I added a teaspoon of baking soda & 1/2 teaspoon salt, mixed it in good, to help w/higher muffins). I rolled it out w/a rolling pin & used a wide mouth mason jar to get my circles because I wanted more smaller ones, got 18 circles! My last 2 from the scraps I just cut in half & rolled them like you showed. Next time, I’ll cut in 8 pieces & roll like you did. I covered them & put them in my cold oven w/the light on for an hour to give them time to rise. I’ll come back after they’ve baked. I’m excited to fork them for the nooks & crannies! 🤣 Thank you for sharing & being so pleasant & cheerful! 😊 EDIT to add: THEY TURNED OUT PERFECT! They’re SOOOOO DELICIOUS! OMG! I’m going to wrap & freeze some for next week’s egg muffin breakfast sandwiches! Yummy 🤤 Thanks, again! 💝

Homemade English muffins are definitely worth making. it is hard to eat store-bought after you make your own. I usually just use the frying pan only. super easy high reward.

YAY!! I'm so excited for you to try these and I love the Bahamas! What a beautiful location. It it's warm in your home, you might want to let the final proof (after dividing into individual english muffins) happen overnight in the fridge instead of at room temperature so they don't overproof. You can just let the dough sit out for about 20 minutes to take the chill off before cooking them. Be well and happy baking!

Just finished following this recipe for my first sourdough English muffin . I subbed 100gm of whole wheat flour in the 500gm and they are amazing! This was So easy and gave me something to do during the 2023 Texas ice storm.❤🎉

I made these today with my sourdough starter discard! I have them all shaped and proofing overnight ! I cant wait to see how they turn out ! Your dough seems a bit more stretchy than mine hopefully it turns out

How much bigger than regular English muffins would you say? Perhaps if they are too big I can make 10 instead of 8. Want to make them this weekend.

I'm about to try my first batch using your suggestion! I've a lot of baking experience in general but never tried sourdough before.
I'm confident I can get your same results if you share more specifics on your methods.
How long did you cast your prayer for and what temp did you have your house set to?
Did you use a specific pre approved prayer, or did you use a custom-made one? If custom made, would you mind sharing the relevant details like position (sitting or kneeling) location (is kitchen okay, or should I go to the foot of my bed) and the verbal ingredients as well as any body motions (is some form of dancing needed, or repeated prostration) that are required for the casting of the prayer to be correct?
Should I wait until 3AM my local time to offer up that prayer, or do you suggest playing it safe and casting my prayer at 3 AM your time? If the latter, can you tell me what your time zone is? Or...now that I re-read it...did you cast it starting earlier than 3am and times it to FINISH at 3? If so, what time did you start the spell and can you maybe post a video that shows the pace at which you spoke during the prayer casting?
Also, if I can't schedule the prayer portion of the recipe at the correct time, what extra work (or ingredients) should I use to compensate for the lack of properly timed casting?
Is it really just more efficient to cover a portion of the ingredients, experience, and labor to go with the prayer route, or can you provide the modified recipe that compensates for the missing ingredients or preparation steps if there is not enough time for this spell?

I'm sorry I'm replying to your post but I'm doing so because you're the most recent poster. There is one thing I'm not very clear on. Do you do two or three "let rise 3-4 hours" sessions? Here are the timings from the video:
8:16 - Mix all ingredients together and let rest for one hour
9:16 - Knead the dough to get rid of all the clumps and then "let rise 3-4 hours"
12:49 - Do gentle folds and "Proof 3-4 more hours and repeat another set of folds"
This should take us to around 3:45 pm but her video jumps to 6:14 pm so it seems that at around 3:45 we knead the dough and let rise another 3-4 hours. That's the only way we get to 6:14 pm. Is this correct?

Loved these! I used honey instead of sugar and they were delicious. I set them in the fridge overnight, they sat in the fridge for about 14hrs. I cooked just as you said then I put them in my air fryer (350 for 8min) they were perfect. Thank you so much!

Hi Rosie! I tried 3 times making your sourdough bread following your starter instructions and 3 times it did not work. I was ready to give up and threw out the starter. I really wanted to try again so I made another starter, baked another loaf of bread and it was wonderful! I just finished taking my English muffins out of the oven and can't wait to see how they turned out. I am so glad I didn't give up. Your cinnamon rolls are next on my list to try. Omg my now go to recipe! I’ve tried several others that were good but the fluffiness and ease of these was phenomenal. I did a refrigerator final proof overnight and let them come to room temp before cooking. I did let them cook in the oven a bit longer because they were so mile high! I might use a tad bit less salt next time and I used honey. Absolutely delicious, thank you!

Thank you, Rosie! I’ve been wanting to make SD English Muffins for so long, but it always felt like it would be too much work-I was intimidated! I used your recipe to make these, only I added the last of my fed starter from an earlier bake & it was like 1/2 cup. Didn’t wanna toss it lol. I got so tired last night that I had to let mine bulk ferment in the stand mixer bowl overnight w/plastic wrap covering it. I woke up with a pleasant surprise of beautifully doubled in size soft pliable dough! 😍 Mine was a bit sticky so I floured my table to knead it (I added a teaspoon of baking soda & 1/2 teaspoon salt, mixed it in good, to help w/higher muffins). I rolled it out w/a rolling pin & used a wide mouth mason jar to get my circles because I wanted more smaller ones, got 18 circles! My last 2 from the scraps I just cut in half & rolled them like you showed. Next time, I’ll cut in 8 pieces & roll like you did. I covered them & put them in my cold oven w/the light on for an hour to give them time to rise. I’ll come back after they’ve baked. I’m excited to fork them for the nooks & crannies! 🤣 Thank you for sharing & being so pleasant & cheerful! 😊
EDIT to add: THEY TURNED OUT PERFECT! They’re SOOOOO DELICIOUS! OMG! I’m going to wrap & freeze some for next week’s egg muffin breakfast sandwiches! Yummy 🤤 Thanks, again! 💝

Homemade English muffins are definitely worth making. it is hard to eat store-bought after you make your own. I usually just use the frying pan only. super easy high reward.

It it's warm in your home, you might want to let the final proof (after dividing into individual english muffins) happen overnight in the fridge instead of at room temperature so they don't overproof. You can just let the dough sit out for about 20 minutes to take the chill off before cooking them. Be well and happy baking!
