      @@Piggypuggy Thanks. In fact in November 2019 I visited Singapore with my wife and daughter. I'm a resident of Mauritius. I was really impressed with Singapore. Pomowtee is the name of my late mother - who I missed the most daily. Sure I would definitely come to Singapore to taste the amazing Street food.

      Yeah.. there're 2 camps.. some like it dry. With bit more wok hei in the noodles. But I liie this kind.. maybe I grew up with a similar version. Slurps up the noodles... 😋

      Yes. Definitely. That’s the reason why I always prefer to have it fresh out of the kitchen. If left in the packet for over and hour.. the noodles will inevitably soak up all the prawn stock and the experience won’t be as great

    ate their hokkien mee since uncle Ng father's time when they were operating at grond floor before govt upgraded to 2 sty hawker. then, every night the place are filled with taxi drivers, night owl who craves for hokkien mee, there were also an old skool western food few stalls away operated by oild couple, think they are no longer around ba.

    One of the best hkm. It is a 2nd generation biz. I have been eating this since his father time, before the fc was rebuilt. A copious amount of pork lard is fry together with the noodle. You can call it pork lard fry noodle lol.

    I always take the first bite with no additional chilly or lime. That is the real taste. Later add on the chilly etc..

    It's ultra wet. Too wet in fact. It should be of medium wetness. But not too dry or it will taste like mee goreng! One shop at geylang a few years ago didn't survive bcos it was too dry. I had to each time specify to be done wetter.

      Super! The noodles are just nice and soft coz it's not supposed to be Al dente with lots of bite to it. i find that wet version of hokkien mee has alot more umami flavour infused into the dish. but some prefer the dryer version with more WOK HEI and less of a slurpy affair. personally i like both. but i prefer the wet version with super loads of pork and shrimp flavour if done well.. it's kinda like fried white bee hoon too.. which has a similar gooey slight soupy stock to accompany the noodles

    Looks ok but it has no pork lard, too wet, and prawn soup stock doesn't look like it has enough prawns in it based on it's colour. I could be wrong but there's better ones out there

    Having 2 rest days and operating for half a day only shows that the rental rate is too low, this hawker has a high profit margin and able to pay his wife n son n helper.
    his stall only available for half a day for 5 days… govt ought to demand a min operating hr n increase his rent instead of our gst n property tax.

      @@tanhuiling6600 actually I like them all.. each has its own characteristics.. wet and dry Hokkien mee is kinda like 2 different variation. Dry tend to have more Smokey goodness.. but wet has a kinda slurpy soupy wet bee Hoon comfort.. so I don’t really compare them against each other. I enjoy both kinds 😋

      there used to be another equally good hokkien mee stall in lorong 5... long time no more le. By a white big curly hair uncle... same cooking style. same dedication.

    Question: Can most uncles at the hawker center speak English? or they just prefer Chinese instead? I used to buy food from hawker center and they greeted me in Chinese and I just stood there like an idiot 😂

    Don't call it "fried" hokkien mee when it's not fried; it's braised. Just call it Hokkien prawn mee.

      the consistency in this stall is actually amazing. i never gotten a plate that tasted inconsistent. shows the dedication of uncle to his work. If u like it, u can be assured its the same quality every time.
