@@singaporefoodie The best HM is home fried, so less oil can be used n it tastes equally good. My niece n my helper as claimed by my relatives can fry the same or even better than them.

I think the difference is in the Wok Hei. Charcoal cooked food seems to be more aromatic

Hopefully they don't use longkang oil, which Chinas' medias n vloggers claimed tt was widely used in China thus adding extra flavour to their foods.
