VEGAN PEANUT BUTTER CUP FUDGE » no oil, sugar free, gluten free, plant based

  • As a kid, one of my favorite candies was Reece's Peanut Butter Cups. Since going Whole Food Plant Based Vegan I have tried many of the store bought vegan copy cat peanut butter cups. The problem with the store bought versions is that they are still full of refined sugars and oils. We came up with our own version which is has no oil or refined sugars and is gluten free. Only whole food plant based vegan ingredients in these delicious fudge squares.

    I made this for Halloween so that I could have a treat, and it was AMAZING! I haven’t had a Reese’s in almost ten years, so thank you for this recipe!!!

    Ingredients: FILLING
    4 medjool dates
    1/3 c creamy p-nut butter
    [just ground p-nut type]
    [no additives]
    [preferably unsalted]
    1/2 c almond meal/flour
    1 t vanilla
    If not holding tog, 1 t water
    [Hint: process filling first, then use same FP bowl for chocolate layers
    Ingredients: CHOCOLATE
    16 medjool dates, OR
    [2 c of other, smaller dates
    2/3 c almond meal/flour
    2/3 c cocoa powder
    1 t vanilla
    If too dry, 1 t water

    Just made these, I used hazelnut meal as well as almond meal and half neglet noir dates as thats what I had on hand, they were delish! hit the reeses peanut butter craving spot on! Thanks so much :)

    My sister and I just had the most fun making these in memory of our mother, whose birthday is today. Reese cups were her very favorite treat. We can’t wait until they finish chilling. Yum😊

    Looks amazing and pretty doable 😀 I really appreciate your videos. I went from vegetarian to vegan to WFPB no sugar no oil in the last 5 years. I am taking on my hereditary Diabetes. I am on a low dose of metformin. I want to be prescription free. I see my Doctor on 2/14/2020 to see if my numbers are in a better healthier range. I just turned 60 years old in January 2020. I am not a wiz in the kitchen, but I am trying do to necessity. Your simple yummy videos are really inspiring.

    I can't wait to try this recipe. I saw another vegan youtuber who made "vegan peanut butter cup ice cream" by buying vegan peanut butter cups and vegan ice cream and mixing them together. I much prefer the Whole Food Plant Based Cooking Show recipes!

    I made this peanut butter cup fudge for a family game night. It was a big success. I had one of our friends over that is a personal chef, she said they were so delicious and wanted the recipe too.

    This is so delicious. I have honestly made it 3 times. I have a silicone mold that has 16 individual squares. I portion the chocolate out in 16 (or 18 and eat two of them) and smoosh it in, then put the peanut butter in and just keep it to 2 layers, makes it easier. They pop out pretty easily and then I don't have to worry about my cutting/slicing skills being sub par.

    Just ate the first piece and this recipe is a triumph! As I get older and get more in tune with my body, I find that I crave traditional sweets less and less because I always feel unsatisfied with a reasonable portion and my body feels awful afterwards. I'm loving whole food dessert recipes because I actually get full and don't want seconds or thirds. It's a big thing for me. Thanks so much for this one, Jill!

    I just made this today for Valentine's Day (we celebrated a day late with our daughter), and it was sooo yummy! My husband said he couldn't tell the difference between this and non-vegan fudge. Thanks for creating a great recipe!

    My grandsons are following your example and are learning to cook the vegan way. They are 10 and 13. It's so wonderful. Today for my birthday Will made the chocolate peanut butter bars. Wow!     I made these a week ago. I used Deglet Noor pitted dates which I added extra because they were smaller. The peanut butter fill ing came together, but the chocolate I had to add a tablespoon of maple syrup for it to form a ball. They were delicious. Thanks for the recipe.

    O, my goodness!!! Made these yesterday and they are incredible. So good, thank you! My 6 and 4 year old beg for them.
    I only changed 1 thing - I used Almond Butter due to Peanut allergies in the household. :) And it still tastes like a Peanut Butter cup!

    Almond meal and almond flour are different. Almond meal is whole almonds blended into a meal - almond flour is the pulp left over from making almond milk, then dried and powdered i.e. is missing the oil. Beautiful recipe.

    This was amazing! I made it today. I was skeptical because I’m not always a fan of almond flour. But this did not disappoint. Totally cured my chocolate craving. I’ve also made your Starbucks copy cat lemon loaf a bunch of times. So delicious…a lot of lemons to squeeze but so worth it! My friends couldn’t believe how yummy it was and so much healthier than the Starbucks version! Thank you for sharing these wonderful recipes!

    All the recipes I watched on this channel seems amazing but never knew if they're as good as they look. Now I know they are after trying this recipe. Those things are really good but keep in mind they're not like Reese's pb cups but as it's described, bownie pb. The outside texture is brownie like and inside similar to Reeses. Great combo that's not excessively sweet, but just right. They keep getting better in the fridge over time and hard not to eat them all. Thank you and great job!

    Instead of almond meal, I use peanut meal. It just makes it that much more peanut-y. I make the meal first by blitzing roasted unsalted peanuts in the food processor. Easy peasy!

    I have no patience for the smooshing/sticky part ... but I have no kids to help LOL so I just took a blob between sheets of parchment and rolled it out with a rolling pin.. put it in my square pan .. the peanut butter part I DID just use my hands.. then did the same thing for the top layer of chocolate with the rolling pin. These are delicious!!

    After you added the second layer I was thinking that you could perhaps scoop out a 'little' bit of the peanut layer in the middle and add an 'oozing' center of peanut butter (just a small amount). Mmm, might give that a try. Thanks for the recipe! :)

      Yes, but if you are using a normal amount, there is not much caffeine in the end product per-serving. It has theobromine in high ammounts though, which is a stimulant that lowers blood pressure. Only really an issue in high ammounts.

    Thank you so much for this recipe. I have been making it every two weeks. I limit myself to two squares a day.I shared this with a neighbor and she has gained 6 lbs. we have both been at home due to Covid. I think it is because she has n’t been going to the Gym. I work on my Nintendo Wii. for 30 mins just about every day. Neither of us has been to the Gym in out senior community since March.
    Do you have an idea of the cal count for this fudge? I am guessing about 100 Calories per square. My peanut butter is homemade without oil. I think we could increase the Almond meal a tad and reduce the Cacao powder.
    Anyone have any suggestions?
