  • JACKFRUIT STICKY RICE SWEET DESSERT
    PULUT MANIS BUAH NANGKA 😋😋😋

    Ingredients:
    7-8 jackfruits (cut into half, lengthwise)
    200gm glutinous rice, either soak overnight or at least minimum for 3 hours
    Can either steam OR cook in a rice cooker 👌
    Toast 2 tbsp of sesame seeds over low flame and set it aside. Can also use fried mung beans 👌
    In the rice cooker, add in the following ⬇️
    Pre-soaked glutinous rice
    300-350ml coconut milk
    2 daun pandan
    3 cloves
    1 tbsp sugar (optional)
    Salt to taste
    P/S: Once rice is cooked, set it aside to cool
    Sweet Coconut Sauce:
    100 ml coconut cream
    100 ml water
    1 daun pandan
    2 cloves
    1 tbsp sugar
    Salt to taste
    Little cornstarch slurry
    Mango Leaf Tea:
    Boil 5-6 mango leaves with 3-4 cups of water for 10 minutes over medium low flame!
    Method:
    Add in everything except the cornstarch mix. Cook for a few minutes over low flame. Then, add in the cornstarch mix. Keep stirring until the sauce thickens. Turn off the flame! Once cooled, can refrigerate for a while 👌
    Stuff the jackfruit pods with the sticky rice. Drizzle it with the coconut sauce and sprinkle it with sesame seeds. Enjoy!
