Hi, I'm Su! I'm a home chef who has been cooking for over 40 years. I created this channel to share my recipes with everyone who would like to try something new, simple, and tasty in the kitchen. Some of these recipes have been passed on to me by my mother and grandmother, and I love learning tonnes of new dishes along the way.
I love trying out all sorts of recipes, from Indian to Chinese, and even Japanese to Western cuisines. I hope you join me on my food adventure!

Stir Fried Long Beans and Eggplant | Su's Cookbook
Stir Fry Long Beans and Eggplant
By Su’s Cookbook ❤️
Ingredients:
8-10 long beans, cut into 2 inches long
2 long purple eggplants, cut into 2 inches long, coat it lightly with some cornflour
Handful of dried prawns, soak in hot water for 3-4 minutes, then drain water and set it aside
2 fresh red chillies
Dry blend the dry prawns and chilli 👆👆
4 cloves of garlic, chopped
Oil for cooking
Sauce preparation:
Every ingredient is just an approximate amount:
Cornstarch slurry (cornstarch + water)
About ½ - 1 tbsp each 👇👇👇
Oyster sauce
Dark soy sauce
Sweet soy sauce
Sesame oil
Any vegetable seasoning powder
Salt (optional)
White pepper powder
Little water (100ml)
Mix all of the above in a bowl and set it aside👆
Steps:
Heat up some oil over medium high flame. Deep fry the long beans and eggplant separately for 1-2 minutes and set aside
Leave little oil in the wok now, add in the garlic and coarsely grinded dry prawns-chilli. Sauté for 1-2 minutes, then add in the fried beans and eggplants
Mix well, then pour in the sauce mixture
Dash of pepper powder and it’s done 👍

Just made this and its is simple and delicious. A hint of tang, coconut & herbs. I added broccoli to mine and ate it as a "soup". Thank you for the recipe!
