Lol, even as an indian I prefer to eat Dosa with fork and spoon specially at outside and I don't know about other places bt in my city vendor do provide spoon and fork to eat Dosa.

Just for you the Anda bhurji recipe.. onions, tomato, green chilles, garlic.. Cook in butter, add in turmeric powder, redchilli powder, coriander powder, salt, add in eggs and scramble and add coriander leaves for garnish.. PAV (the buns) is tricky so you can either bake or have the bhurji with buttered bread too

After flame off n food more or less at room temperature sprinkle lemon juice for the authenticity
