    I have the utmost respect for Pepin because he isn't a cliche celebrity chef who uses sensationalism or flashiness. He's like an encyclopedia of food knowledge. No sensationalism needed.

      @@fortazerty you can also put a whole egg, mustard lemon, seasoning into a narrow high container, blend it with a stick mixer, dump in a good quantity air oil and then blend and at the same time pull up slowly so the mixing blades pill in a little oil at the time, my mom showed me that and it's like magic. (I failed at the first attempt, because I was impatient and gave up too early, but well, everything working on the first try would be boring 😂)
      I like making my own mayonnaise but one egg yields for me about half a liter of mayo, and I alone can't eat that much at once, and self made mayo sadly doesn't keep that long 🥺

      @@fortazerty it's not really a recipe, since there aren't any measures or ratios, it's more of a freestyle way to make mayonnaise, I think my mom got it from a cook somewhere in France like ages ago 😅

    I love this man, I practice his omelette technique almost every day, still can't do it as well as he can. But this is the amazing thing, I have been eating omelette all my life and never had it the way he makes it. I will never make it any other way now. Such knowledge and humility. I got tired of just copying recipes and having to buy ingredients for one dish that breaks the bank. Thus I started teaching myself techniques so that I won't have to be reliant on some celebrity chef's cookbook and stumbled upon this. This is pure gold. Learning so much, will definitely watch this over and over to infinity.

    Astounding stuff. The specific techniques here are so difficult to find online without (I suppose) enrolling in a classical French culinary school. I'm a professional knife sharpener and I've learned more about the use of a knife in the first 20 minutes of this than I ever have talking to chefs I visit with.

    It is a privilege to be able to see something like this on the tubes. Think about it, Jacques Pépin started his cooking journey at the age of 13, and now we get to watch his abundance of knowledge and condenced experience of 70 years for free. By watching these priceless videos the interested average person that enjoys cooking can learn so much. I am sure there are many younger peaople that will get inspired by Jacques Pépin and his natural way of presentation. This video right here is a treat to watch.

    When I was at highschool I remember they were playing these as shorts during ad breaks on the cooking channel. I have learned so much about cooking from Jacque Pepin and he is classes above all of the modern celebrity chefs.

    thank you so much for this generous(free) contribution Jacques Pepin, cooking is a noble art, and you are a true artist, looking at a lot of your techniques are familiar to me,(some taught to me from my mother , and other skills learnt from TV cooking shows) but you teach so very much i never knew, this is your second video i've seen and now i'm a very happy subscriber. this is a remarkable platform for learning in most cases free of charge, something a disability pensioner like me truly appreciates, i learn so much from TH-cam and i'm eternally grateful.

    He's a culinary genius, as well as being a true gentleman and kind family man, had the very tremendous pleasure of meeting him in Aspen when he was there giving a demonstration at a wine and food affair, my mother was participating as well, certainly not in his league but she held her own, lol, he's been there many times and I accompanied my mother every time she was asked, I was her sou chef, test kitchen and recipe tweaker and editor for her cookbooks. Jaque is a treasure and legend in the cooking world, it's so wonderful when you meet someone you admire and they're genuinely nice people, Julia was a total let down, crotchety, condescending and curt.....

    I only had time for 15 minutes and the butter roses blew me away - he made it look so easy, like sure just scrap the butter and it magically do as you command - yes if you are chef Jacques Pepin. I will come back to finish, but I don''t know if I have enough life left to learn a tenth of what this man knows.

    When I was a kid, my mom would see different cooking shows on tv, but she didn’t understand english at the time. I would sit next to her and help translate. Seeing this made me remember that small memory ☺️

    I hope that everyone watching this video realizes that this man is a genius and a national treasure. Imagine having Albert Einstein teach you basic arithmetic, all the way through advanced nuclear physics. That, in the kitchen, is what what we have all been gifted by the great Jacques Pepin. Now realize that he been an instructor for more than half a century and all of his techniques are available to the world both for purchase and, in many cases, for free. Chef, you have changed countless lives for the better and you are owed an endless amount of gratitude. On behalf of mankind, thank you!

Most of us, cooks or not cooks, want always to learn some essentials of decent cooking as well as learning some principals of maths and physics.     I was so mesmerised by this chef! What an incredible compilation of cooking secrets! I can't believe how many techniques I learned about! I watched the whole 3 hours and loved every presentation. Although I follow the Carnivore Diet lifestyle, I love cooking for friends and family and will definitely not throw broccoli stalks out! His voice is so soothing and Chef Pepin makes you feel like a cooking rockstar. Thank you!

    30 some years ago he had this show on PBS and was giving the same techniques. He was younger at the time. He had more techniques back then since it was a half hour show. I have always loved his techniques which I still use up to know. He did not show any cooking at the time since it was just about techniques.
