Yup, if they wanted a marshmallow flavor, they should've added vanilla. It doesn't really make sense to add actual marshmallows since they're mainly egg whites and gelatin.
Hey guys just a fyi.. Never cap your jugs aftet the first rack.. Always put them back under airlock.. Possible fermentation could start somehow or bot degassing can cause too much pressure in jugs and cause them to crack.. The Smores could taste better if you backsweeten.

I have only been brewing beer for two years and mead for 1 so i am no expert, but if your mead turns out not as sweet as you want it you can do a quick google search about back sweetening. This is the basic outline though: first let the mead ferment all the way out and age. Then after aging you add Campden Tablets to the mead and wait about two hours then add Potassium Sorbate and then let the mead sit for a day or two (these products stop the fermentation so when you add more honey or your choice of sweetener the yeast wont eat it) and then add the honey to back sweeten. Then age the mead again because adding more honey may cause your mean to lose its clear wine look and you have to let it settle again or add a clearing product (like superkleer). sorry if you already know this i just wanted to let you guy know if you did not because i know i would like to know if i didn't already know. Happy brewing y'all!

Since you guys were talking about Coconuts, I was thinking that you could do something with Pineapple. Although I'm not sure if the acidity of the pineapple would kill off the yeast.
I hope they see this, I'm brewing a Chocolate mead at the moment. I'd suggest boiling it together, I did just a regular mix of orange blossom honey, and cocoa powder, it mixes well but over time separates and leaves a film on top the the gas from the yeast can't penetrate. I had a test batch die because of it. Hope you guys see this!

In regards to the smores batch, it may be worth trying again using Dutch process cocoa rather than cacao, since the Dutch process soaks the beans in an alkali solution to neutralize much of the natural acid, thus greatly reducing the cacao's bitterness.
if you guys want a good smore-ish mead you need a lot of honey. you need to caramelize it on an open flame in a pan but don't burn it. it gives a good smokey marshmallowy kind of flavor
Sparkling mead next? make a dry mead with champagne yeast then rack and mix in more honey, bottle in sparkling wine bottles. You'll get a secondary fermentation in the bottle which will make it sparkling! gonna try some when elderfower and rubarb sparkling wines are done!

Bread wouldn't rise. Yeast is already activated in the mead. When you make bread, when the yeast activates and makes the bread rise. And the alcohol would bake off
Chocolate containing meads need a lot of aging to reach they're real potential, as the bitter oils break down over time, and the chocolate flavor will improve. In other words: put it away, forget about it, check back on it in a year or two
If you guys try the smores again, try using more honey in the batch. Also, try using marshmellow fluff, like the stuff you can by in a can. It should break down easier than the large marshmellows, and has a higher sugar content. Also... why no gram crackers... this is no smores mead... it is a lie...

Try making tropical mead (mango, pineapple, and coconut), elderberry mead, ligonberry mead or mixed berry mead (strawberries, blueberries, blackberries, and raspberries).
