I feel like they should have used less obvious people. For example, the native English speaker could be Singaporean or Indian or South African or Nigerian or something. Those people often speak English natively. They could have also included someone who is from a different country but grew up going to an American international school.
Americans actually say um a lot. It depends on region and generation. I used to be a tv news reporter and I remember the frustration of interviewing people who said ummm every third word. So a soundbite that should have been 15 seconds was 30 instead.

A lot of the middle of the USA is heavily German ancestry (Ohio/Pennsylvania west to Colorado). Here in Wisconsin, it's usually Bayerisch ancestry. Wir wohnen seit 140 jahren in Wisconsin.
