As Polish myself, I think white Żurek soup (with white sousage and egg) + Bigos (cabbage hunter stew) + ruskie pierogi (pierogies with potato/cottage cheese filling) is pretty mighty combo.

As a Pole that has been exploring many many cuisines from all around the world (I tried like 400 of recipes during the last 3 years, and I have 60+ cookbooks with different cuisines) I'd say there are hardly any contenders when it comes to our soup and pork game. If I had to make a list of my top 10 soups, I only have 2 - 3 options that come to my mind, that are not Polish. French onion soup is one of them, Kimchi jjigae (although it's something between a soup and a stew), and our Czech neighbour's Cesnakova Polievka. Mexicans make a lot of delicious shredded pork. I love Chilorio, Carnitas and Cochinita Pibil, and I'm generally in love with their cuisine so much, that it's in my top 3 along with Italian and my national cuisine. Koreans are as good as we are at fermented / brined / pickled stuff. I'd personally say that Baechu Kimchi (napa cabbage kimchi) has a slight edge over our Kiszona kapusta (sauerkraut), but that's because I love spicy food, and it's not such a common occurence amongst my people. Poles generally think that black pepper is spicy, let alone even begginner level peppers like jalapeno :D. That being said, you betcha we love our meat, and we can appreciate when others do it right. For that fact, as much as american food is synonymous with quite poor health standards, they do know their barbecue. I f*cking love the times we're living in, when it comes to culinary exchange. I do enjoy tinkering with all the new ingredients I learn about, and incorporating them into my own kitchen.
I love how confident that man is regarding quality and taste of his food. That's how you can distinguish a real food wizard from a regular food truck owner.

Poles are the world class specialists of grilled sousages. Especially in the summer. Polish summer holidays. I don't think there is a Pole who hasn't prepared sausage for a barbecue. We also love grilled black pudding/"kaszanka". I have a large grill in the garden, a small one on the balcony and the electric one in the kitchen.The 4th will be gas powered grill.

Polish people have obsession with cleaning let me tel you 😂 its in our genes! I don’t live in Poland but always amazed when I come back how clean everything is and have no problem eating in most of the restaurants, some thing I couldn’t say about eating out in England or here in Usa.
I’m living in U.K. for 11 years now going here and there but I always remember my grandmother going to every restaurant in Poland …it’s ok but my is better….we love what we do and definitely we love to eat…

Yep, unfortunately you can’t be much ‘entrepreneurial’ in Poland. Goverment makes it an absolute nightmare which is such a shame. Not surprising therefore to see polish entrepreneurs thrive and shine outside of their home country.
Not everyone, but I've met similar people here and there. The best thing about Poles is that they do the simplest, most ordinary things with love and attention to detail. If you're going to do something, commit to it. That's why we've even brought barbecue to a world-class level. Our kitchen is brilliant. ps. May 3 is Constitution Day. In 1791, yes... 233 years ago, Poles adopted the first constitution in Europe... And today, when meeting friends, the first question is Do you have a chair at the table? Come to Poland and try żurek, bigos, ogórki kiszone (not kwaszone), kopytka, kluski leniwe, bitki wołowe, racuchy, sernik, szarlotkę and pączki (polish donut). Then you will learn what Polish flavors are and this is just the beginning of many wonderful dishes.
Poland deserves everything. I was born few years after WWII and during communism. And then guess what ? Was hardly nothing to eat. Our (Polish people) dream was to have few slices of ham for Christmas
Because everything we produced was made in collective farms (kolkhozes) and sent to Russia-just as the Russians looted Ukraine of food, causing many people to die of starvation. For someone who doesn’t understand: it was forbidden to be a private farmer and raise pigs or rabbits. Yes, I remember having sausage only during holidays in the 1980s; even smoking meat was not allowed. Producing your own meat was treated the same as producing alcohol. As we know, moonshining is illegal, and in Poland, private meat production was pursued just as strictly. And in the stores? There was NOTHING!
@@romekatomek2159you made small mistake. In poland colectivisation of farming industry failed in the 1950s thats why 70% farming industry was in private hands. However (as you said) farmers were forced to give half of their goods to the goverment. It was perfectly legal to own pigs, rabbits, ducks, chickens etc. but it was illegal to sell their meat on the black market (but it was hard to enforce)
Let's add another issue to this. For 45 years of communism we couldn't show the world anything, because our fucking neighbor uncle USSR banned the opening of borders. We couldn't travel abroad. NOTHING. Our history was falsified, other countries attributed Polish achievements and inventions to themselves. Only today, after 70 years, the world is learning about Polish culture and history. And Polish cuisine is, in my opinion, the best in Europe after Italian and Turkish (!?!).

To the point, when my - than just gf - entered my kichen asking "love, can i help you with something" just to be met with a look that could cut through steel and slowly hissed: "leave.... my..... laboratory........ I have ordered On'On sauce to Poland. Just ate the last part of it using spoon straight from the jar. It's incredibly good. Last 3 jars I have ordered are waiting for grill season. This sauce is perfect for pierogi but not only. I have put it to my sandwiches and to my dinner. But the smell... You feel it in your nose many hours later. It's so simple, so tasty, so perfect, so powerful. I simply felt in love with it. Poland rulez, I have to say.
Try grilled Karkówa aka Pork souvlaki. It’s the neck muscle cut and definitely a favorite amongst the masses. A flavor of its own and irresistible once you’ve had a taste.
W tym roku eksperymentalnie uwędziłem karkówkę razem z szynką. Karkówka okazała się o niebo lepsza. Poprzerastany tłuszczyk uczynił mięso soczystym podczas gdy szynkę albo się nastrzyknie peklosolą ( wtedy jest soczysta ale niezdrowa) albo nie i wtedy jest sucha.

Robi się tzw. confi z cebuli, czyli karmelizuje się ją na maśle z dodatkiem odrobiny soli i CUKRU! Tak, tak- cukru! Kiedy zezłoci się, podlewa się to niewielką iloscią wody( lub lepiej bulionu) i dusi ok 40 minut. Dodajemy mały liść laurowy prymat z 3 ziarenka ziela angielskiego Potem trzeba przyprawy zabrać i ten sos zblendować lub- jak dawniej- przetrzeć przez sito. Doprawić pieprzem. I gotowe.
We Poles love our kitchen techniques, also we had influences of french, italian, russian, german, swedish, and lithuanian kitchens. Thats why its so tasty.

I have ordered On'On sauce to Poland. Just ate the last part of it using spoon straight from the jar. It's incredibly good. Last 3 jars I have ordered are waiting for grill season. This sauce is perfect for pierogi but not only. I have put it to my sandwiches and to my dinner. But the smell... You feel it in your nose many hours later. It's so simple, so tasty, so perfect, so powerful. I simply felt in love with it. Poland rulez, I have to say.
Try grilled Karkówa aka Pork souvlaki. It’s the neck muscle cut and definitely a favorite amongst the masses. A flavor of its own and irresistible once you’ve had a taste.
W tym roku eksperymentalnie uwędziłem karkówkę razem z szynką. Karkówka okazała się o niebo lepsza. Poprzerastany tłuszczyk uczynił mięso soczystym podczas gdy szynkę albo się nastrzyknie peklosolą ( wtedy jest soczysta ale niezdrowa) albo nie i wtedy jest sucha.

I am Polish. I can also make such an onion sauce)) It is popular in Poland. It tastes best with fried sausage or grilled sausage.

Robi się tzw. confi z cebuli, czyli karmelizuje się ją na maśle z dodatkiem odrobiny soli i CUKRU! Tak, tak- cukru! Kiedy zezłoci się, podlewa się to niewielką iloscią wody( lub lepiej bulionu) i dusi ok 40 minut. Dodajemy mały liść laurowy prymat z 3 ziarenka ziela angielskiego Potem trzeba przyprawy zabrać i ten sos zblendować lub- jak dawniej- przetrzeć przez sito. Doprawić pieprzem. I gotowe.

@@FoodReviewClubUK Just got back from ONON DRILL & PIEROGI, and YES I have to agree it's a little gem in Enfield Town. The Polish sausage and the Pork belly were outrageously good, the chicken was juicy and all the sauces were banging. Another Great find from the FRC...
Was gonna get food somewhere else now I'm left with no choice but to travel 40 mins to get this today. We shall see 👌
