    Recipe
    1 cup unsalted butter (250g)
    1 block 70% cocoa dark chocolate (150g)
    1¾ cup caster sugar (375g)
    1 cup milk (250g)
    1 tbsp instant coffee
    2 eggs (100 ml)
    1½ cup self raising flour (235g)
    ½ cup cocoa powder (60g)
    Method
    Instructions:
    1.Make the Cake Batter: Place a bowl over a pot of simmering water (double boiler method). Add milk, butter, sugar, and chocolate. Whisk until smooth and melted. Remove from heat. Gradually whisk in eggs.
    2.Combine Dry Ingredients: Sift flour, cocoa powder, and coffee into a separate bowl.
    3.Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, whisking until smooth and combined.
    4.Bake: Pour batter into a baking paper-lined tray. Bake in a preheated oven at 160°C for 50 minutes. Let cool completely.
    5.Make the Ganache: Heat 250 ml cream in a pot until it boils. Remove from heat and add 250 g chopped dark chocolate. Stir until smooth and glossy. Let cool slightly.
    6.Assemble: Invert the cooled cake onto a serving plate and remove the baking paper. Spread the cooled ganache evenly over the cake. Create a pattern on the ganache using a pastry comb.
    7.Serve: Cut the cake into triangles. Dust with cocoa powder. Serve warm or cold with whipped cream and fresh fruit, if desired.
    Tips:
    For a richer flavour, use high-quality dark chocolate.
