Definitely oil up your hands and knife as there will be lot of sticky sap when you cut it. Oil will help less stick to your hands.

In mumbai there r 2 types of jackfruits available. One is kaapaa & other us Barakaa, don't know whats called in other languages...
Kaapaa fruit petals r more solid & preferred ones.n. Barakaa fruit petals r very soft & becomes smashy, this variety is not preferred for direct consumption..
From outside I am not sure how to identify the variety type.. In case nyone knows then let know...

once its unripe and cut, it wont ripe. You can use unripe jackfruit to make curries.
