    Fresh salmon is great but you could use canned tuna to make cooked tuna and avocado rolls much cheaper! And even make teriyaki chicken rolls very easy too

    I love that this is accessible. My only criticism is that he did not use the salmon skin since salmon skin rolls are super popular and delicious. It would have added an unexpected delight to the salmon section. Char the skin in a cast iron and you'd have the makings of a delicious roll.
    Also, bamboo sushi mats are less than $2 at most Asian markets. That's an investment that I'm willing to make.

    First time here. Glad I found you after Bros eat Greene broke up. I have never seen a packette drawer before. I'm a avid sauce packet collector. Soy sauce, taco sauce, hot sauce, honey, raw sugar... How do you a) organize these, b) keep in stock, c) rotate for freshness? Please, do tell.

      The only thing you mentioned that has an expiration date is taco sauce. Soy sauce and hot sauce are basically eternal, and obviously sugar is, and honey found in jars from Ancient Greece is still good.

    Save the water from washing the rice and pour it in your garden. Don't use too much in potted plants, it can lead to mold, but for outdoor plants you can douse them all and they'll love you for it.

    My daughters and I love to make our versions of Maki rolls. It is a ton of fun and you get to play with your food. The best part is trying everyone's concoctions. Dinner and a show!

    BTW - sushi rice doesn't have to be expensive. If you avoid the specifically labeled sushi rice, you can get it pretty cheap. In an Asian Market things are generally cheaper, but even if you don't have those around, you can get other types of rice, as long as they're short grain - so called 'porridge rice' (used for rice pudding) is short grain and cheap. Just read the back of the rice and see what you can find!
    AND you can get fish even cheaper if you use canned tuna or gravad (smoked) salmon.

      Fresh frozen fish should be safe. Freezing kills most pathogens.

      @@NotSoCheezyYT I would not recommend. Freezing slows the growth of pathogens but there are still a lot of bad things that can be present. If you can't afford sushi grade fish then don't use it raw.

      I once ate raw fish that had been fresh frozen from Kroger. sure the pathogens are killed but I contracted roundworm. get sushi grade fish lol

      Most raw fish are flash frozen at grocery stores and are safe. By the time they arrive at stores, they have already been frozen for multiple days and will be safe for consumption. Stuff like “sushi grade” actually doesn’t mean anything and you’re likely just paying extra for nothing.

    For under 10 bucks on Amazon, I got a kit that had 5 pairs of chopsticks, a bamboo rolling mat, rectangular ceramic plates, ceramic sauce dishes, a nigiri mold, and a heart shaped sushi roll mold. I think it's worth it.

    You can denaturalize the fish with soy sauce instead of cooking it. It's what is done with poke in Hawaii or aguachile in the northern Mexico with shrimp and snapper.

    I appreciate this but if you're going to use cooked fish, why not opt for a style of sushi that always uses cooked? Shrimp probably would have been cheaper and the end product wouldn't read so struggle bus.

    Good hack for thin strips of veggies: just take a veggie peeler to the flesh of the veg. It makes nice thin ribbons

    Smoked salmon is also delicious, but much more spendy. Also, cucumber+krab legs+cream cheese is a California roll. Sushi is so easy and affordable at home!

      Try mayo and gochujang paste! Its freaking amazing and has a better flavor. I made both and preferred that over the sriracha and i looove sriracha.

    The same ingrediants can be used in a rice paper/salad roll. Plus peanut sauce, yum. Also if you zest your citrus and then freeze or dry the zest will save that flavor for a future inexpensive recipe.

    By the way, "sushi grade" just refers to the way it's prepared (usually cut in blocks), and that it's quick frozen to extremely hard and stays that way until you defrost it. Doesn't actually refer to quality. Theoretically, any reputable frozen fish is safe. In practice, maybe not. But that's why I'm friends with my fishmonger.

    Nori is not available everywhere. I have to drive about an hour for it and short grain rice. But medium rice does make sushi rice. I used some left over steak and a ice tray to make the nori less sushi also made onigiri with tuna and suracha mayo. Now I'm hungry.
    So when is the other half of meal prep for 4 coming out?

    As a pro chef I typically think your tips have been pretty good, but this is a HUGE FAIL... yes rice is the most important part of sushi that’s what zushi means “rice”. Would have been better to do tunamayo (caned tuna in water, mayo, honey, mirin, soy sauce want it a touch spicy add wasabi or sriracha to taste) cheaper than salmon and you can skip the broiling method or use the salmon in place of the tuna...the vegi was just fine. Buy your rice at an Asian market to save money (local grocery stores markup is crazy expensive) get the other ingredients there as well it’s also a huge money saver, order online if you don’t have an Asian market near you.
    It won’t be as cheap as what you presented but it will be superior and I would consider a splurge meal, mirin is a very common pantry item and everyone who loves Japanese food should have it. I can post a recipe if anyone is interested. Even though I have a criticism on this post it was still good content and much appreciated, thank you.

      Sasukio10 Yes you would be correct! A good quality imitation crab would be cheaper and it’s very versatile also for even more economical sushi, tamago would be very tasty fast and easy to prepare!

    You could have used that piece of salmon rawin your sushi just remove the skin the difference between sushi-grade salmon and regular salmon is where it is along the fish and the cut. I've done it many times with fresh or frozen dethawed salmon. Also you can used smoked salmon too.

    If you buy farmed fish instead of wild there is very little chance of having any parasites.
    If you want to be extra safe buy species of fish which are less susceptible to parasites. When you are preparing it hold the fish slices in front of a strong light source, and you should see the worms if there is anything in them.

    two tips:
    1. to get raw salmon food grade it just needs to be frozen for three days and then thawed.
    2. if you need raw food grade salmon the same day look for a cold smoked one, i love the smoke it imparts on the roll

    I make these all the time w just my hands, and you can even use canned sardines but instead of cucumber do long strips of shredded green cabbage. Just don’t use water until the end to seal the roll and I eat it like a burrito instead of cutting.

    I like your struggle meals series Frankie, but as a Japanese housewife, this sushi dinner recipe would be not good. Calrose or sushi Rice should soak in at least 30min with cold water before boiling and the amount of water is very very important. Also, many people struggle to mix the best ratio of vinegar and sugar. There is an easy way to use "sushi powder". The sushi powder makes the sushi rice taste good. Why sushi is very expensive? because making sushi rice is very difficult and takes time for all process of making perfect sushi. When I went to Europe, I ate so many disgusting sushi, because people do not know how to make sushi!

    So everyone knows, flash frozen fish is pretty safe to eat because it kills the organisms; sushi grade is not really a thing, and regular, fresh fish is fine (fresh from a quality fish market)
