- Indulge in a spicy and aromatic Chicken Gravy recipe! Dry roast red chillies and cashew nuts, then blend with tomatoes for a rich paste. Cook chicken with onions and spices until tender, then simmer with kasuri methi for an irresistible flavor. Perfect with chapati or rice!
Ingredients:
10-12 whole red chillies
10-15 cashew nuts
4 tomatoes, quartered
8-10 tbsp oil
4-5 medium onions, chopped
4 tsp ginger garlic paste
1 tsp turmeric powder
2 tsp red chilli powder
4 tsp coriander powder
1 Kg chicken pieces with bones
Salt to taste
1 tsp garam masala powder
1 tsp roasted and crushed kasuri methi (fenugreek leaves)
200 ml water
Cooking Steps:
Dry roast the whole red chillies and cashew nuts on low heat for 2-3 minutes. Set aside to cool, then coarsely grind both.
Add the quartered tomatoes to the grinder and continue to blend until a smooth paste is formed.
Heat 10 tbsp oil in a pan. Add the chopped onions and fry for 5-6 minutes over medium heat until translucent.
Add the ginger garlic paste and fry for 2 minutes on low heat.
Mix in the turmeric powder, red chilli powder, and coriander powder. Stir well and add a splash of water. Fry for another 2-3 minutes on low heat.
Add the chicken pieces and mix well. Fry for 5-6 minutes over medium heat until the chicken is browned well.
Season with salt and mix in the cashew-red chilli-tomato paste. Fry for 5-6 minutes on medium heat until the oil separates.
Add the garam masala powder and cook for 1 minute.
Pour in 200 ml water, mix well, cover, and cook for 15 minutes.
Remove the lid, add the roasted and crushed kasuri methi, and simmer for around 2 minutes.
Serve hot with chapati or rice.
