although adding wine is for enhancing the smell and the characteristic flavor to the dish, i suggest you not to add any wine or substitute it to other non-alcoholics. just pour enough water as indicated in the video to simmer the meat.

不放油或少許油,煸炒豬肉和生薑,沿鍋邊加老抽,紹酒,糖。1:2:4 即一扁勺醬油,兩扁勺紹酒,四調羹糖。加一碗水。煮開轉小火。
煮一小時,大火收汁。撒蔥完結。
你沒看錯,不加鹽。
什麼五香十三香統統不加。
这样的做法适合家庭。要是饭店这样做,早倒闭了。时效性太差。而且你放了糖。要是不放糖不放盐,出锅又快,那么简直完美。煸炒会不会增加致癌率呢?
