You should provide subtitle if your mike is so close to the wok. With so much of teh cooking noise your voice at time could not be heard. When you produc a video please playback and check it whether it is doing fine. At least you are doing well not injecting any (LOUD) backgroud Music which many others have done so where the narration is almost submerged and could hardly hear what they were talking. Thank you for the video.
I find blanching the dou Miao with a little salt keeps the green color ..

to avoid burnt garlic, i first add the ginger slices then abt 5 secs later, in goes the garlic. both will be equally brown at the same time
I don't have ginger nor garlic.. will follow the rest of your instructions
You can use green onions/spring onions instead. But it should be fine without them 😀
