  • Ingredients:
    450g or 3 cups flour
    2 teaspoons active dry yeast
    2 teaspoons of sea salt (not table salt)
    375ml or 1 1/12 cups warm water (105-110 degrees)

    Directions
    * Mix flour, yeast and salt & water in a large bowl. Use wisk (danish wisks are my favorite) to mix well. Dough will be sticky & wet~similar to cake batter.
    * Cover dough with cling wrap, plastic shower cap or a plate, leave on counter for 1 hr. + dough needs to double in volume. Dough should be wobbly like jelly and the top is bubbly. If after 1 hour it doesn’t seem to be rising, move it somewhere warmer
    * Preheat oven to 450 degrees F.
    * Flour work surface with flour, scrape dough out of bowl.
    * Using a dough scraper or anything of similar shape (cake server, large knife, spatula), fold the sides inwards to form a roundish ball/shape. Don’t be too meticulous here. It doesn’t need to be perfect by any stretch.
    * Gently plop dough onto a large piece of parchment paper. (not wax paper)
    * Cradle dough in parchment paper into Dutch oven.
    * Bake 30 minutes covered, then 12 minutes uncovered or until deep golden and crispy.
    * Cool on rack for 10 minutes before slicing.
