The Best Brown Butter Blondies

  • Blondies have the taste of a delicious chocolate chip cookie, but with the texture of a brownie. Brown butter with light brown sugar = Butterscotch!!
    These are fast and easy way to treat your family and friends to a delicious dessert bar.

    Brown Butter Blondies
    Yield: 12 bars
    Preheat oven to 350℉
    Line an 8x8 inch pan with greased foil, or parchment that overhangs the edges by 2 inches. This allows you to lift the blondies from the pan.
    In a dry pan over medium high heat, toast the pecans by stirring occasionally until fragrant and lightly browned.
    1 cup of chopped pecans, set aside to cool (optional additions: 1/2 cup chocolate chips, butterscotch chips, or sweetened flaked coconut 😋 )
    Whisk these dry ingredients together in a large bowl:
    1 cup of all purpose flour
    1/4 teaspoon baking powder
    1/8 teaspoon baking soda
    1/8 teaspoon salt
    In a 10 inch sauté pan over medium heat, melt
    8 tablespoons unsalted butted (1 stick)
    As the butter melts, stir continuously until the butter solids brown. This takes about 4 minutes. It burns very quickly so as soon as you go beyond a light golden color, remove from the heat and set stir in:
    2/3 cup of packed light brown sugar
    1/4 cup granulated sugar
    Mix the sugars into the browned butter. Smear as you stir to avoid any lumps. Set aside to cool. When barely warm add:
    1 large egg
    1 large egg yolk
    1 tablespoon light corn syrup
    2 teaspoons vanilla extract
    Add the sugar mixture to the dry ingredients. Add the pecans the bowl and stir to incorporate all ingredients well.
    Pour the batter into the prepared pan, spread to the edges and smooth batter with a spatula. Bake at 350℉ for 28 to 35 minutes
    To test: Insert a toothpick into the center of the blondies. When it comes out clean it is done.
    Remove from oven to a cooling rack. After 15 minutes, use the overhang as a sling and lift the blondies and place on a cutting board. Peel the foil off and cut into 12 pieces. These are delicious warm or at room temp. Enjoy!

      Hi doc, you can substitute the corn syrup in this recipe, it won't be quite the same but it will be delicious. Substitutes for corn syrup are: maple syrup, honey, molasses, golden syrup and agave nectar.
      Let me apologize for not answering you sooner. I have a new phone and it has taken countless hours to customize. Apparently I missed the setting that will notify me of activity on my TH-cam channel. There is always one more thing, one more setting. 🤪 💕

    Hi, here I am again making your Blondies. Nina, do you have a recipe for lemon bars without using a boat load of eggs? Four eggs would be great. 🍷💐❤️

      Hi Ursula, I hope all is well with you. The original Joy of Cooking has a Lemon Bar recipe that only uses 2 eggs. I'm not sure if I have ever made that recipe. For recipes like that I go to Cook's Illustrated. I'm not sure how soon it will be before I get back to making videos. We've just moved and the new place is topsy turvy. I haven't located my cooks yet! Those are both easy sources to find at the library or maybe you even the books at home. 💕
