Sweet/Heat is one of my favorite combinations. Making some spring rolls this weekend, I'll probably try this sauce recipe to accompany. (Sans the nonstick pan of course) 😉

Some of the best chefs I have ever worked with don't measure a thing when they cook. It's all taste/visual/audio. This has nothing to do with skill. Now if you wanna talk about her scraping a nonstick pan with a fork, that's a better flaw to point out.
