    240g Plain Flour
    1 tsp Baking Powder
    1 tsp salt
    2 tsp Vegetable Oil
    1 tsp Brown Sugar
    3 tbsp Butter
    1 tbsp Olive
    100 Warm Water
    Flour for dusting
    Add the flour, baking, salt and brown sugar to a bowl and mix.
    Slowly add the warm water and mix to make a dough. The dough needs to be firm but slightly sticky, add more flour if required. Once the dough is formed, pour the vegetable oil over the dough and cover with a tea towel allow to rest for 20-30 minutes.
    Remove the dough from the bowl divide it into 3 equal portions and roll into balls. Roll out the ball into circles as thin as possible. Melt the butter and mix with the oil and then brush over the surface of the dough.
    Cut a line from the centre of the dough to the edge and roll the dough into a tight cone. Now push the centre of the dough in on itself until it forms a ball again. Repeat with all the dough balls.
    Roll out the dough to the size of the frying pan that you are using.
    Heat the pan, and then brush the top of the dough with the butter mixture and place the dough into the frying pan buttered side down, while it’s in the pan brush the other side with butter. Constantly flip the roti until the desired colour is achieved.
    Remove from the pan and do the same with the remaining roti.
    While the roti’s are warm clap the roti in your hand to separate the layers.
    Serve with any curry to mop up all the flavours. Lick your lips and enjoy 😋😋😋
