How to Create Curved Text in Inkscape

Hi. I can't find the text controls toolbar that you have. Do you have a video on how you setup inkscape to get those toolbars?

How do you put the text on the other side of the curve?

I cannot figure out why my pen tool doesn't curve like yours. Yours takes the curve from the center of the line but mine gives it a super sharp curve right at the end of the line.
