I just made this tart. It is well worth making but please note the following crucial points: 1. Your bain marie saucepan needs to be big enough to accommodate a large surface area of the bowl, otherwise the curd will take 30mins+ to thicken (as mine did). Even then, I don't believe Jamie's curd is ready in 5 mins off the heat, no way 😂 Curd is notorious for taking ages - and it really does need to be nice and thick for this recipe. 2. You need quite a big piece of pastry to fill the pan and come up the sides, so bear this in mind. About 500g is a good amount. 3. A non-stick pan is essential if you want to release the tart from the pan in one piece. I didn't have a suitable non-stick pan and learned the hard way... It just breaks up into individual pieces of pastry and the curd splurges everywhere 😢Still tasty though! Bon appetit x
