  • I know our cuisine is famous for its kebab, really good pastries, vegan/ vegetarian mezes and they all are incredibly tasty. But today I want to talk about our mouth-watering, simple yet not so known salads. They are sweet, sour, salty at the same time and with fresh ingredients they become the most amazing salads you can eat all day, every day. First one is Çoban salad (Shepherd’s salad), one of the Turkish classics. The last but not least, is the one I call ‘manipulated tomato salad’, I took some ingredients out of the Çoban salad and added some international flavours like balsamic vinegar and made another heavenly salad. It is great with fish, kebab or even by itself!

    Çoban Salatası / Shepherd’s Salad
    Servings: 4-6
    Difficulty: Easy
    Prep Time: 8 minutes
    Cooking Time: -
    2 large tomatoes, diced
    1 medium onion, diced
    2 cucumbers, diced
    2 green peppers, diced, bell peppers work great as well
    10 sprigs of parsley, chopped
    2 pinches of salt
    5 tablespoons extra virgin olive oil
    1/2 lemon
    • Mix the onions, peppers and tomatoes in a large bowl. Add a pinch of salt and rub with your hands. This way, onion will soften, and tomatoes will release their tasty juice to triple the taste of the salad.
    • Add in the cucumbers and parsley.
    • Season with a pinch of salt. Pour in the olive oil and squeeze the half lemon juice.
    • Give it a good final mix and simple, fresh and delicious çoban salad is ready. It is great with hummus, köfte, falafel, toasted bread and white cheese (feta). Feel free to add pomegranate molasses if you have any. You can also add 4-5 ice cubes to keep the salad cool even in a hot summer day.
    Manipulated Tomato & Onion Salad
    Servings: 2-4
    Difficulty: Easy
    Prep Time: 6 mins
    Cooking Time: 2 mins
    1 handful of pine nuts, you can use any nuts
    2 large tomatoes, sliced into semi circles
    1 medium onion, sliced into circles
    3 cloves of garlic, peeled
    A pinch of salt
    4 tablespoons extra virgin olive oil
    1 lemon
    4 tablespoons balsamic vinegar, to substitute, mix molasses and vinegar
    A pinch of black pepper
    5 sprigs of basil, leaves picked
    • Roast the pine nuts in a pan on medium heat for a couple of minutes until golden brown.
    • To make the sauce, crush the garlic with a pinch of salt using a pestle and mortar.
    • Pour the olive oil in the mortar. Squeeze the lemon juice and use 1,5 lemon if your lemon is not juicy.
    • Add the balsamic vinegar and black pepper.
    • Rub the basil leaves to wake their flavours.
    • Mix the sauce with the onion, tomato, basil leaves and half of the pine nuts in a large bowl.
    • Transfer to your serving dish and let it rest for half an hour for the flavours to engage with each other.
    • Heat the rest of the pine nuts and sprinkle over the salad. Your juicy salad is ready with bitterness, sweetness, sourness, saltiness embraced with fresh and nutty flavours. Enjoy with your loved ones!

    Honestly, if there's one channel that deserves a million+ subscribers, it's this one! Not only is it easily one of the best cooking channels on the internet, but the uplifting vibe in all the videos is so infectious. And I love how Refika always talks about sensible and rational ways to never waste anything, how to use the best of every season and how to combine things in the most healthy ways. For me (as an Italian), this is the best kind of food wisdom the mediterranean countries share.

      Because a good kebab is not a good kebab without good salads accompanying it :)) In Adana city in Turkey 6-7 kinds of salads are given with famous Adana kebab.

    Hey Refika, gorgeous presentation & recipes, as always. In India, we call the Çoban salad Kachumbar, prepared with almost same ingredients except instead of parsley we usually add coriander. I believe there is something similar called Kachumbari in African nations as well. It is wonderful to see the threads of flavour and culture that connects us all. Thank you again.       @@Refika yes, one of favourite aspects about food is how it can connect us not only to our childhood or some happy memories but also connects us with thé rest of thé world. One of my best friends is Turkish and we met at University. We connected through thé amazing similarities between our food, language even some cultural aspects. Your videos remind me of happy times with her when we cooked together and shared our meals. Thank you so very much.
      I have a small request, you have some beautiful recipes on your Turkish channel but my Turkish is very rudimentary so it would very much appreciated if you could add some English subtitles for those recipes. They look so tempting.

      I used to get a fabulous Kachumbar salad in a NYC restaurant.... sadly I no longer live there... I know it's a cucumber salad but my recreations just don't fit the bill...Do you have a recipe you'd like to share?

      @@jbrn4500 Hey, of course! Thé basic recipe is exactly the same as Refika's, including tossing and gently massaging the onions, tomatoes, green chillies with salt and then adding cucumbers . Season with freshly ground black pepper & lemon or lime juice, depending on what you have on hand. Instead of parsley we use a big heap of finely chopped coriander. Toss well. I usually skip thé green chillies if I'm making it for myself because I don't enjoy thé heat. If you're using Turkish sweet peppers, do as Refika does but if you like or tolerate heat well, you can use green chillies usually available in Indian or South Asian markets.
      If you're feeling fancy, you can add in a pinch of roast, ground cumin and another pinch of ground mango powder (aamchur)- also available at most South Asian markets. But thé basic recipe is what most of us make at home. Thése extras are for spécial occasions or when you want à bit of a changé.
      Some other variations include tossing in sprouted mung dal or any other sprouted lentils or légumes, including sprouted black gram or even regular chickpeas. If adding lentils etc, definitely do not skip thé roasted ground cumin & aamchur. Also, I like to lightly steam thé sprouts. Thé sprouted lentil variations are more often eaten as a snack rather than served as a salad.
      A great (and personal favourite) summer variation uses diced, fragrant, unripe, green mangoes, tossed in after thé cucumbers. If using thé green mangoes, skip thé aamchur (can make everything too tart), also add a little sugar (to balance thé tartness from thé mangoes) along with thé roast ground cumin and if available, a little chaat masala (a tangy spice mix but less tart than aamchur). No oil is used in thé green mango version.
      Hope this helps and wasn't too confusing or vague. I was taught to cook by my aunts and their instructions were always to 'go by eye' - (estimate & instinct) so now all my "recipes" have no specific quantities 😬
      *We usually skip thé oil as well. Typically, Olive oil isn't used in Indian recipes. But when the "extras" or spices are used, a drizzle of peanut/ groundnut oil, sesame or mustard oil is added, especially if using sprouted lentils.

    The best part of a tomato and onion salad is the tomato juice that sits at the bottom of the plate once it mixes with the olive oil and salt. When I was young, I was taught to drink that juice and I still do that today. These recipes look fantastic, Refika! I will try them very soon! Cheers!

    Love these salads especially choban salad in Bulgaria we also love tomato and peppers salad especially in Northern Bulgaria where tomatoes are peeled parsley and onions are added we use those big summer pink tomatoes in my country Choban salad is a boiled egg and pastrami tomato and cucumber salad with cheeses modern versions are with ham

    Wow! Two great salads. Salads are eaten all over the world. I am no exception but this video has impacted me the more. The second one was really mouth watering. Those onion rings added a lot to the recipe. All that juice. Simple but different.I have always liked the way you use your hands. Oh how many things our hands can do! I will try it. My only problem is with the garlic. I eat it. It ismedicinal. It is a kind of spice but eating it raw is a task.

    The tomato and onion salad is one I grew up but we learned to make it in Naples. We never put nuts on it though. I am patiently waiting on my tomatoes to ripen so I can use my own tomatoes to make this. Okay, not patiently waiting but urging them to ripen faster.

    Turkish salads are what got me in love with salad - back in the day I wouldn’t touch salad with barge pole 😂
    but my husband is Turkish and salad almost always needs to be on the table and I can’t get enough of it now!

    Tomatoes are a gift from above. I love them. One of my favorite memories is eating them straight from my grandfather's vines. There is nothing better than a tomato still warm from the sun. Well, maybe your salad!

    I was so happy to see you use pomegranate molasses! A few years ago a friend of mine introduced me to it. I use it in a salad that I made up, which has become my favorite salad. It consists of greens of whatever type you want to use (I usually use spinach and/or arugula), sweet red pepper, cucumber, red onions, Mandarin oranges, and pomegranate seeds. The dressing is olive oil, sesame oil, balsamic vinegar, pomegranate molasses, and salt and pepper. I love your videos!

    The first salad is basically our daily salad that goes with lunch (minus onions to be considerate of my onion hating brother) as for the salad dressing that is left we soak bread in it and eat it or even take some and put it on rice or my other brother literally drinks it, he always claims it as his unless we beat him to it XD. I also use the same ingredients with pasta and make pasta salad (we consider it as a meal). Thanks for showing me that I'm not the only one who experiments with salad dressings with adding different things and have different tastes. Thanks again. Bless you.     Fabulous, Refika, thank you. When we visited Istanbul we loved the fresh fruit and vegetable stalls, and the pickles. Turkey truly deserves to be celebrated for its great produce. We went round taking photos as much of the fresh veg stalls as we did of historic monuments. Fresh fish, fresh bread and a salad was so simple, so delicious.

    The 1st salad is known and loved by me from youth-days: my mother used to do it every day. We call it "Israeli salad" but it could be the Turkish influence from the days of the Ottoman regime (like the Turkish coffee we use to drink here). Our Arab neighbors eat something very similar, also. However, the 2nd salad is new to me and it looks wonderful! I'll try it very soon for my family. Thanks a lot for this tasty upload!     I was afraid of salads , I just thought they were little pieces of veges cut and tossed , but after I really had a good salad with veges macerated in lemon , olive oil and salt , and gave out their juices , I began to love it some times more than regular dishes 😄, I love to play with texture by adding nuts and little crumble of feta adds lots of depth and flavor , some of my fav greens are radish leaves , which are peppery , and little fenugreek leaves , which are peppery and little bitter , 🥰, thanks for great salads , I will try them soon 😊

    I LOVE the spoon salad now that I've made it. It is very similar to Italian Tomato-Onion Salad...even down to squeezing the tomatoes (just a bit) in order to generate a "dressing". Mmmm, so good. And it's similar to Panzanella but there the bread (hard bread or croutons) is mixed right into the salad. Any way you cut it (no pun intended) this salad is, indeed, mouthwatering!!!

    Refika - I made the shepherd’s salad. I let it sit in the fridge over night, then brought it to room temperature for serving the next day (that was today’s lunch). This is absolutely the best salad that I’ve ever had. I simply love it. Plus, the juice is great for dipping bread. I will make it again very soon. Thank you for sharing your recipes with the world.

    My grandmother from Italy would make a salad similar to the tomato and onion one, but no Balamic. Well you couldn’t buy it years ago. But we would drink the juice off our plates or sop it up with her bread. That was a meal! Love your videos.

    Yum !!! I want to make these for my mom...she loves salads but can't eat any leafy greens because of her meds....Refika, I finally went to the turkish coffee shop yesterday!!!! It smelled so good!!!!! I had turkish tea and Simit!!!! It was so good!!!! I got some turkish apricots, rosewater turkish delight & some cezerye because it looked so interesting!!!! They had your white cheese, sujuc, and Lamacun too!!!!! & beautiful jewelry!!!! I can't wait to go back!!!!

    Water in my mouth 🥰 In Romania we eat the first salad with white cheese and dip chunks of bread in, just like you 😉heaven on earth... Cioban in Romanian means "shepherd"

    What really makes this channel special? The food, the love of food and friendship, and the team. I love the constant interjections by Bahar and Burak, which make it all feel like a bunch of friends getting together over something they love. Bravo, Refika. Bahar and Burak (and others I may not have seen) for getting across a commercial channel where the passion is first and the commerciality second. I've already tried out some of the recipes (fantastic) so will go and get the book and some of the things from Etsy. You are definitely a breath of fresh air.

    Lovely, thank you for sharing. We add a little Raw Mango to the salad and it adds another dimension to the salad. I am also from India and we use Coriander its an awesome salad.
