    I love your explanation of too hot vs. too cold for the lavash, and using the scraps. Nobody ever explains things like that in explaining cooking, just "tada, it's perfect" and pose for instagram photos. :-)

      Yes, and the history of the recipe / technique, is what as me hooked on this channel! In the UK, all we know of Turkish food is the doner kabab turning on a spit, so this channel is an eye-opener, much appreciated!

    I have just discovered your amazing channel.I lived in Melbourne Australia for 43 years..huge Turkish community.One of my best friends, Yuksul's mum had a small Restaurant...amazing food.Turkish cuisine is one of my favourites on the planet.Now I know how to make lavash..thx heaps.Unfortunately Yuksul passed recently with Cancer.But seeing your channel bought back wonderful memories.Anyway definately an instant subscriber.Living in Thailand now.Will introduce them to some Turkish shish.Thx so much for your warmth,. and enthusiasm😁😁

    Ah Refika, you have sunshine in your soul. All your videos are good, but this may be my favourite.
    Reminds me of some of the deceptively simple dishes we used to enjoy when coming down from climbing in the mountains to the small villages below.
    With all the rosemary it's almost more central Mediterainian than some of the other more spice heavy dishes in other parts of Turkey. But juicy and filled with flavour with the wonderful lavash to mop up the precious juices.
    Would be heaven to return to Turkey some day and if I could I'd love to eat some of the wonderful food you prepare.

    I made this last week with some frozen leftover beef tenderloin. It was sooo easy because I could cut the meat very thinly. The marinade here is simple but so beautiful. We cooked it only on one side as it was so thin. I also made 2 batches of your lavash. This was a lot for 6 people, but there was nothing left and it was inhaled by all in 10 minutes. Thank you for sharing this lovely recipe. So simple but is a wonderful way to showcase the beef. Simple fresh ingredients with a great cut of meat. Cant wait to make this again. Hats off to Turkey ❤️🇨🇦 (ALberta).

    Thank you for emphasizing the importance of using the correct equipment. It makes all the difference in having a recipe turn out the way it is meant to be.
    I had a cookware shop & cooking school. People thought I sold cookware, bakeware, knives, cooking utinsils, etc, just to increase sales, but no. Many of the recipies we taught in the cooking school really couldn't be made without the appropriate cookware. The equipment - literally - makes the food.
    Substitutions for some of the traditional kitchenware Is possible, and I'm so glad you give suggestions. What you do so well is show substitutions that actually DO what original equipment accomplishes. You also explain WHY it is an ok alternative - as well as what not to use, and why.
    Everything about your show is well done. All your information is interesting, but simple to understand. You obviously know your way around a kitchen!
    Your presentation is delightful. 5 ⭐!

    I have been making my own flatbread for a while now by teaching myself online, but it's only now that I learned the importance of the pan heat in making them! Sometimes I wonder why my bread comes out hard and 'gummy' even if I don't change the recipe ingredients so it's really nice to learn why that happens.
    Really, really love the way you teach and how you explain all the 'whys' and 'hows' in detail as opposed to simply saying a step and moving on. Also amazing is that I'm learning fundamentals of flatbread making in a recipe video that also tells me what dish to best use them 😊 Thank you so much Refika! Love your videos! 💚

    I made this recipe twice. And it's absolutely delicious. My husband travelled a lot to Turkey in past years and he loved the food. I promise that one day I too will visit. I am a baker and love to cook. I have cooked many types of breads over the years, and with the pandemic now in NY, we are using cooking a new recipe every day to keep our life exciting. I too grow a garden in the back of my house, so most of my produce I tend to try out new recipes. Our lives look so similar in the way we enjoy food. Thanks for the good videos and the enjoyment you bring to the kitchen.

      In fact, Kolot cheese is the main ingredient for another famous dish for breakfast - "Kuymak" or "Mıhlama", which is easily prepared in about 10-15 minutes with corn flour, butter and water. Not sure if Refika had posted that recipe before in this channel but it's a great one, highly recommended. If not, she should so I, as a Turkish grande chef, can learn a substitute for Kolot cause it's a bit costly cheese even in Turkey haha

      @@mrsp6825 as far as I remember, Kolot cheese can be found in A101, which has at least 1 store in every corner of the country. The producer is Kebir or Vakfikebir. I haven't tasted the original Kolot cheese in Trabzon yet so I don't know the original taste for comparison but that Kebir brand should work, in general.

    Lavash
    250 g (1,5 cup + 1 tbsp) plain flour
    125 g (½ cup) water
    2 tablespoons olive oil
    1 teaspoon salt
    • Mix the flour, olive oil, salt and water and knead the mixture for 6-7 minutes.
    • Divide the dough into 5 equal pieces and shape them into balls. To get the perfect ball shape, place the dough on one hand and with the other, make a dome shape and pressing the dough, roll it between your hands. Cover the dough balls with a damp cloth and let them sit for 5 minutes.
    • While waiting for the dough, place your cast iron pan upside down on the heater and turn the heat on. Instead of cast iron, a thick-bottomed steel pan works just as well.
    • To roll out the dough, dust your work surface, rolling pin and the dough with flour. Gently roll out the dough to around 20-25 cm. For a perfect round shape, flip and rotate the dough each time you roll it out. Then, remove any excess flour.
    • Place the dough in the pan and cook until it becomes partially brown. Watch the heat - if your pan is too hot, your bread might burn and if your pan is not hot enough, it will dry out.
    • Piling the lavash on top of each other will keep them warm and prevent drying. You can butter each one as well.
    • Enjoy the lavash with your loved ones!
    Important Tips
    • For an easier cut, keep the meat in the freezer for about 30 minutes.
    • It is important not to use a knife or scissors to cut the rosemary to prevent the bitter taste.
    • Beat the meat slices in a plastic bag. You can cut 2 edges of the plastic bag to place the meat in it easily. Plastic bag will also prevent the meat to stick to work surface.
    • For the meat to get bigger, slide the meat mallet each time you hit the meat
    • If you don’t have a flat meat mallet, you can always use a small, thick-bottomed pan for the same purpose.
    • Make sure that the leftover meat pieces are also used. They will surprise you with their sizes ones beaten.
    • Keep in mind that cheese just taken out of the refrigerator is always easier to slice.
    • Copper or enamel pans are preferable as such materials cool down very quickly after turning the heat off so the meat doesn’t get overcooked and dry.
    • To get the perfect ball shape, place the dough on your one hand and with the other, make a dome shape and pressing the dough, roll it between your hands.
    • For a perfect round shape for the lavash, flip and rotate the dough each time you roll it out.
    • If your pan is too hot, your bread is might get burned and if your pan is not heated enough your bread will dry out until it gets cooked.
    • Placing each lavash on another one will keep them warm and prevent drying.

      Aoa rafika and the team . I subscribed your channel only because we love turkey and its people we share some values as our religion .but i want to know that your name sounds muslim name . Are you muslim as well or not because many people in turkey have different religion . Please answer my question . As we muslims have halal and haram concept as well thats why i asked this question

    I thought your other videos are awesome, but this one's raised the bar even higher!! Freakishly delicious looking shots of juicy meat, herbs and melted cheese... omg. And then one useful tip after another with making the lavash.
    Add the humorous clip, the shots of Istanbul, and the whole team... we're being spoiled, but I'm definitely not complaining :D
    Hmm... maybe you need to start finding a big enough venue to hold us all when we turn up to cook with you (with a jar of homemade Turkish pickles under our arms :P )

    WOW!! I watch your videos on my TV because I prefer over watching on my phone, lol! And after I saw your cabbage “spaghetti” video, this one came up automatically and I LOVE this recipe too!! I don’t eat gluten, but I guess I can substitute the lavash for gluten free tortillas. I know it won’t be the same, but at least it will be close enough! And that beef, with all those spices! YUM!!     WOW !!!!! This recipe is what I needed !! Here in Qatar, bifteck is sold just as thin as your perfect hammered meat, and we always fried it and hated what we did ... But now I know how to manage it next time :D

    Refika, i was terrible at the bread but made up for it with the meat dish. My husband loved it. I forgot the mozzarella cheese so i used pepper jack. My husband could not stop eating it. Still used the lavash (i dont want to call it that maybe really thin hockey pucks haha) i will not give up. I will work on lavash.😙
