    Just made your recipe and,
    WOW! Absolutely Divine!!! You're right, you can't exactly describe the taste except that it's a powerhouse of aromatic flavor. I loved the crispness and the creaminess of the potatoes and the stock was so, so delicious.

    Pan is really crowded! Leads to a bit of steaming rather than roasting. Just one Chef's opinion. They look really scrumptious though. I join your dinner party anytime. Thanks for the video.

    I made these from another recipe tonight and was looking for a different variation of the recipe and I love the addition of the sweet potatoes. I wonder how carrots would taste cooked this way as well.
    Gonna add the sweet potatoes next time though, it looks delicious.

    I love your cuisine. You always find the way to present wonderful recipes but in your simply way , like its so easy to cook it. Its not easy, but you make it look like this. And love the beautifully presented dishes. I have 2 recipes from you from more than 4 years and I cook them often. When someone asks me "where do you have these recipes from" For me its natural to say. "From Byron", like everyone has to know you. I know you from so long, like you are my dear friend.     Wow, those look amazing! They might be the most labor-intensive potatoes I’ve ever seen, but I’m sure they’re worth it. I might have to make those for one of our holiday get-togethers. The only problem is that I might eat all the sweet potatoes myself since I LOVE sweet potatoes!

    Your potatoes look great..i do the same but i also brown the sides of the potatoes so they are all crispy...anyway its a matter or taste concerning the structure of the finish potatoes ...in your palett...thank you chef.....its a great side dish for all sorts of wite or red meat...better than the usual french fries.....bravo

    Looks beautiful. But not sure if double-searing is worth it. Why not chuck in everything headfirst in the oven and do the searing later?

    I love fondant potatoes but having seen your recipe with the sweet potatoes (I originally thought they were carrots, lol), I kinda want to try and make fondant root vegetables now, like carrots and parsnips. It would be a bit different to just roasting them like we normally do, I think they'd be delicious...mmmmm, my mouth is watering now, teehee. Thanks for the great recipe and inspiration Byron.     This looks great! I am not a fan of sweet potatoes either mushy or firm so I will stick to russets but I will try this on my wife. I love most of the recipes you post and quite often I enjoy the music you put in the background. Can you tell me more about the music in this post?

    Let me ask one thing. Have you tried to prepare the fondant potatoes (specially the sweet) and then freeze it? I am thinking of adding sweet fondant potatoes in some frozen meals.

    I normally make my fondants slightly differently but these turned out great. Doesn't really work very well for sweet potatoes though? That's just my opinion they look great though!

    Baking them in the stock after searing them gets them even more creamy I’ve done stove top like you and oven like traditional. I get it we all have our own version but the oven part of the step which is more traditional is key AF for the boogie creamy center we all like about this dish 😂🤣😅.

    Wow, this looks amazing! I roast vegetables in my oven all the time. This would be fantastic to try on just about any root vegetables. Can't wait to try!

    I absolutely love fondant potatoes. Love how you used sweet potatoes as well. Not a fan of sweet potatoes myself but done like this I think anything would taste good. Stock and butter soaked goodness....mmmmmmmm. I think my own video is suggested after this as Well! 😂😂

      ByronTalbott i think the only other way I've tried sweet potatoes and liked them is a recipe by Peter Gordon. Which was mashed sweet potatoes with garlic butter and thyme. Really good.

      LOL...I actually prefer them to be a little more rustic looking in shape...I gravitate away from the typical uniformity of these. Plus it's easier, but just as appealing to the eye. I haven't tried the sweet potatoes yet, but I will : )

      iicjlmbftn111 Vegetable stock is a great substitute. I personally like the boxed over canned, unless you make your own.
