    Before making, cut the cauliflower, steam it with salt, let it dry out on a paper towel and then bake it in a 150C oven for 10-12 minutes, it takes out the moisture in the cauliflower, and adds flavour before frying. My biggest complaint when I eat cauliflower outside of home is that people do no season it before adding flavour. So season before you put it in the batter, it'll taste so much better!

    I don't know why but, the highlight of these vlogs for me tends to be watching Byron enjoy his creations at the end. It makes me so happy! Byron, have you ever made one of your dishes, sat down to eat it and then instead of tasty satisfaction you were like "GROSS!! Where did I go wrong in this recipe?! Did I use salt instead of sugar?!! What happened?!" lol. Somehow I doubt it, but it's kinda funny to think about :)

    I've been subscribed to you since the beginning of your channel and I absolutely love your videos. I am a vegetarian myself, so I enjoy recreating your recipes but adding a vegetarian twist to them. I'm glad you are adding more veggie alternative recipes to your channel, it's super helpful for us vegetarians out there. I look forward to seeing what recipes you bring forth this 2018!

    Hi Byron, thanks for sharing this lovely recipe, I made this today it's lovely but just a couple of things, firstly 1tbsp of salt in batter I find it's too salty (for me ), secondly you forgot to put garlic powder and chilli in your recipe box below . It's nice and I enjoyed but I learn to make it even better next time . Thanks.

    I’m sure you can use seltzer water as a substitute for beer since it is used mostly for the fizz to add volume, but I guess there is the flavours from beer, but still you can use seltzer, its kinda like a tempura batter?

      thomas frank Not really, most of the alcohol cooks out, and most tempura batters don’t use alcohol, and they are very crispy. From my knowledge its only for flavour.

    Awesome popcorn cauliflower! I've been making cauliflower chicken strips/nuggets and just doing Frank's red hot and ranch or BBQ sauce and it's just delicious! I'm not vegan anymore, but this is superior to chicken because you don't have to be nervous about eating tough chicken or a vein, or getting a piece of bone (all of which I have gotten while eating breaded chicken!)
    Also I wanted to add that while I have the batter and oil set up anyways I usually make some onion rings to go with it!

    I am making this today!!!! I was considering doing it with maple syrup, but I'm going to follow it to a T. My daughter said, well mom, honey is a by-product of an animal, not the actual animal.     I love whenever you make recipes that are vegan (minus the honey this time, but still) because I love you're recipes a lot and whenever they're vegan I know that I can make them exactly the way they're intended and I don't have to change them up to enjoy :)

    The cornstarch is going to clump up if you put it straight into hot liquid! It's better to mix it with some cold water first (equal parts water and starch) and then add it into the hot liquid. (its called a slurry)
