      moon6unny just to be clear, this is one of 5 courses that will be on my pop-up dinner menu and it's the 4th course.. funny enough this portion might be a little too big for the dinner. One of the first things my culinary teacher taught me was the importance of portion size when serving multiple courses.. Being aware of your guests pallet limits is crucial for a good dining experience, but if I were to serve this "family style" it would be a bit bulkier and less refined.. The core concept of this recipe is what it's all about. You can always tweak it to your liking after you know how to cook it.

    yall realize that A: he's probably gonna use those potato trimmings for mash or soup, and B: it's small because its the kind of artsy-fartsy plate you'd get in a MULTIPLE COURSE MEAL. Each individual plate isnt supposed to fill you up, the whole set course is.

    my husband loves to grill outside and he slices potatoes like that very thin and also onions, puts oil on top and in alluminum foil adds to the grill while the steaks are cooking. They are soooooo good. Of course I love steak and potatoes any kind of way except I don't like rare steak.

      As long as the beef hasn't been contaminated with uncleaned kitchen utensils, it would be safe to eat if it's slightly cooked. Also, raw beef itself doesn't carry much parasites.

    I figured it would be cool to share one of the courses from a dinner menu (5 courses) that I'm working on this weekend and the portion size got a little (or a lot) lost in translation. Most likely my fault, but to clarify. I would approach this a bit differently if it were for a family dinner, but maybe that's what my next video should be because of all the confusion on portions. Time to go buy more steak! I think I might get a ribeye this go around.

      I commented early on the portions. If you are going to take the time to make a video show what you are going to do. And cover up those LAF tattoos. Do something more original than pan frying a steak and potato chips.

      @Daniel L Dessert! I'd still roughly double the plating on this if there wasn't an appetizer involved. An appetizer and a desert of about the same size would be perfectly filling for most people. The variety is also better than a brick of steak and a whole potato.

      You're not supposed to eat just one dish, you're supposed to eat a variety of dishes in a course meal or else you'd get full from just one dish, this dish is intentionally meant for a part of a course meal.

      See in some parts of the world, people aren't fatasses and dishes aren't meant to be scarfed down. They do these things called courses where you're able to still eat a variety of food, experience different flavors and still leave full and happy. Mind boggling, I know.

    What is your thought process that goes into portioning each dish for a full meal?
    I see a lot of people commenting on the portion size but I feel like this would be one dish of a meal, not the full meal, something I think most people aren't too familiar with.

    wow what an awesome take on the potatoes, ive never seen anything like it ( i mean except for bagged potato chips lol) i never had steak before last year so i have a question: why do you need to let the steak sit for the 5-7 minutes before slicing?

      This is a trend in some of the newer upscale restaurants if you don't want to make them yourself. For example, Salute in Hartford, CT does this exact thing, but a little thicker on the potatoes.

      Honestly, having your own restaurant that makes enough money to pay for everything, upkeep, wages, and your own wage is super stressful and in order for a restaurant to survive it takes way more than being able to cook good food.
