    I never canned potatoes, but I never added vinegar to anything g I canned by water bath. We canned almost everything for three hours. Tomatoes were shorter because they are acidic.

    Hi I wanted to know if your Amish friend knows anything about canning with to old fashion glass lids? I was able to get some with the rubber gaskets and rings. I love this concept but sometimes struggle with getting them to seal.

    I try to use my common sense. I do pressure can potatoes. I have done it with skins in water and pressure canned. Two years ago I started dry canning after watching Carter at Grow and Preserve as well as RuthAnn Zimmerman (former Mennonite) they came out great. I use the dry canned differently than ones in water. Every year I can various meals in a jar that are based on regular recipes that my family loves. If the recipe has meat in it, then I pressure can quarts for 90 minutes and pints for 75. If it has no meat, then I use the time for the veggie that has the longest pressure time. This has worked for 20 to 30 years. The way I do it is safe. The jars keep for several years. My paternal grandmother canned during the depression and my Father talked about his mother jarring up meat with juices and then covering the jar ingredients with melted tallow or lard. They did not have refrigeration when he was a young boy. They lived on it so it must have been ok. I do not know how long she boiled anything for, but that was how they did it.

    I dehydrate tomatoes and peelings, then powder it. It stores for so long. When I want a thick sauce, I add powder to thicken it the consistency I like. This next year, I will be freeze drying it, then powdering. The neat thing is you can just dice the tomatoes, freeze dry, then fill your jars and vacuum seal. Then rehydrate as diced or mash them for crushed tomatoes or powder for paste or soup. This paste year, I canned approximately 839 jars of stuff. I can like you do, I am a rebel canner lol.

    I can tell you from experience, my grandma never put vinegar in anything but cucumbers to can. The book you have is the way my grandma canned her beans and potatoes and when she took them out of the pressure cooker and the lids would pop to seal she always thanked the Lord, as always everything was perfect.

    I make my vanilla with spice rum! ;) (Captain Morgan) and I buy the giant jug o booze, and I put 25 vanilla beans into the jar (sliced open, like you did) then I shake the jar every day for about 3 months before I use them!!! SO GOOD!

    Do read the instructions that come with the Tattler lids. Head space is 1 inch, even for tomato sauce. USDA guidelines for tomato sauce say 1/4 inch headspace, but with tattler lids that will not work. (Ask me how I know. Ugh). I use a china marker to write on the lids date and product. This can be washed off with hot water, scrub with baking soda if needed. I miss the ping, but the savings and always on hand make up for it. There is a learning curve, but worth it. Practicing with water is a good idea!

    Regarding the vanilla beans in the bottle- cut them up so the part sticking out of the vodka can continue to extract. You probably don't have to worry about any of it going bad, but get all of the flavor. After extracting you can decant and use them for another round, then scrape out the seeds if they weren't cut to use as vanilla paste, then lay the beans out to dry and put them in sugar for a bit to make vanilla sugar. One bean flavors quite a bit of sugar, a couple of cups. Thanks for sharing your way to make it! Editing to add- after making the sugar, you can dehydrate the bean until super dry, spin it up in a coffee grinder and you'll have vanilla powder. The bean that I left whole took much longer to make than the ones I cut open like you did

    I made some with vodka and golden grain. The vanilla was darker using the golden grain. The purer the alcohol the more vanilla it is able to draw out. However, both are very good and i do this instead of buying vanilla now.

    I always let vanilla sit for a year. When I strain it, I put all the beans from all the jars together, and add more vodka and leave that sit for a further year.

    With those beans how we measure out in measuring cups.... how about a more even measure? Weigh the beans per pint and quart, and add the water after. When measuring beans, you could still wind up with different weights of beans in the jars after processing. If you want a more precise measure, I use a kitchen scale for the beans and I get better results.

      This is how I do it... place your measure on a kitchen scale, tere scale to zero. Pour beans into the measure and weigh while on the scale. If you don't know the precise measure of a 1/4cup of beans for example, follow the math guidelines on your bag of beans in ounces, or Google how much does a 1/4 cup for example, of beans weigh in grams or ounces

    I made this a few years ago and did a deep dive into making your own, its not as simple as you would expect. You have to make sure the proof of the alcohol is correct and what to do to make it correct. And most of all it take a year or more to be ready. I started using mine after a year and it was amazing. I did some with rum and some with vodka. Both are amazing, but the rum is my favorite 😊

    I made 12 small bottles using vodka. They have been sitting for 4 months. They do get dark. Perfect for gift giving. So very easy. Make almond extract the same way but by using raw almonds. Very good also.

    Thanks. I made some like yours, but the thing is, when to use it? I use lots of vanilla in cold deserts, where the alcohol flavour is not welcome. So do you have some good recipes for cakes and cookies where only the vanilla will come through?

    Seriously, you get packs with 12 + vanilla pod packs on the US 😲 That's crazy. Here in Britain we only get packs with 2 pods and they are extortionially expensive. I bought a packet before this Xmas just gone to make vanilla infused sugar and then never got around making it.

    Do you know that vanilla beans come from a certain type of orchid? I make my own vanilla by using vodka and I make it w spiced rum. It’s excellent. You don’t have to throw away your beans. Add vodka back in. Keep it going.
