I'm gonna start adding (finely chopped) omelette fixings to the egg mixture. But even with just with a little soy sauce, sweet vinegar, and S&P they're really good.

I thought I’d get bored but somehow I didn’t. And now I really want a torta, which is what my grandma called a circular omelette she’d make for us. That’s not what a torta actually is. A torta is a sandwich, but the omelettes were round so she just went ahead and called them that anyway. Yes I highly want a torta with chocolate milk on the side. Love and miss you abuelita. We use to do one at a time in a restaurant I worked in, it was part of our Japanese breakfast we offered. That was hard enough and we had strict instruction around colour and layering. Ours was cut thin and served with slices of grilled thin cut salmon and rice. So tasty.

I tried making one today. The best I could do was four layers with a wooden spatula, and I still had some brown spots and tearing in some places 😭. I didn't even think of throwing the pan to help fold it. What I notice is the chef lightly scrambled the first batch so it has some structure and won't fall apart when rolling it. I'll definitely try it out later.
