I followed all the instructions, did I do anything wrong or how do I fix it? edit: I cooked it for another 30 mins on the highest heat but it refused to cook so I left it and whipped the cream. When I added the mixture the whole thing turned into a sloppy mess and it was so liquid! I tried to whip it once the 'curd' was mixed but it just made it worse. I am really disappointed with this recipe because I followed all your instructions but it still turned to soup :( Please tell me if I did something wrong because this seems like a great recipe and it would be a shame to not make it properly.
Sounds like you made two mistakes. First don't leave it on the double boil by itself. You have to keep whisking it while it heats up. This will probably be around 5 minutes of constantly whisking. Second, if when adding the curd to the whipped cream...the curd has to be completely cooled. Otherwise it will turn to liquid.

Whipping cream should be cold. Keep it in the fridge until you use it. If you can keep the bowl in the fridge as well. Colder the better
