    Hanoi is the most beautiful in autumn when the leaves fall. I went there to eat a bowl of pho. Seeing the sound of traffic and a little chilly of autumn, that feeling is so nostalgic 2 years ago

    As a Hanoian, this is the first time I have seen PHO with meatballs. Apparently it is not traditional PHO but look fairly good, a culinary creation version. Will give it a try.
    Btw, scissors are not for meatballs 🤣 but for bagel twists (“quẩy” in Vietnamese), you cut “quẩy” into smaller pieces and dip them into pho soup.
    There’re many 7-eleven stores in HCM city but no one in Hanoi. Instead, it’s very easily to find Circle-K (similar convenience stores) in Hanoi.

    I am sitting in my local sort of vegan "clean food" place where often grab lunch while I work with their excellent wifi and watching my mate Paddy bring me 1000 reasons to go find fabulous food!     Great video, especially re: the scotch egg observation! There have been discussions on what “scotch” really means (preparatory method vs locality), as well as the true origin (Scottish, English, or Indian) of this dish of sausage wrapped egg, breaded and deep fried. In 17th century Hanoi, Vietnam, there were two trading ports - Dutch and British, so it would not have been unreasonable to assume that there was some degree of cultural sharing. The English Scotch egg is thought to have Indian roots ("Koftas"). The Dutch version “Eierbal (Egg ball)” is a specialty of Groningen and thought to have some Indonesian influence ("Bakso Telur"). Both India and the East Indies were influenced centuries earlier by Arab traders who held monopoly to the spice trade via Venice.
    It must be noted that anything breaded, floured, and fried is a Moorish (Andalusian Arabic) tradition, which was introduced to Asia by the then-heavily Moorish influenced Portuguese and Spanish explorers (Yes, Fish and Chips and Tempura had Portuguese origins...).
    Vietnam has many versions of this "Scotch egg" formula (most likely unrelated to the European versions) - seasoned ground pork enrobing a quailed egg, covered with roasted young rice flakes (cốm) and deep fried, or a fish paste version, “Chả Cá Bọc Trứng Cút Chiên Giòn.” Amusingly, per the 19th century "Culinary Delights of Yorkshire," the original Scotch egg used fish paste rather than sausage meat. How about that? Et voilà nous y sommes...

Trung Quốc sử dụng rất nhiều dầu, mỡ, nước tương và các loại thuốc bắc, VN biến đổi giữ lại nguyên bản vị của đồ ăn nhiều hơn, trong các bữa ăn gia đình có khá nhiều món luộc, hấp, nướng trên than hồng và ăn kèm cùng rau thảo mộc tươi và nó luôn được kết hợp với vị của món gốc như tanh, lạnh, nóng, độ ngán, mùi riêng của gia cầm đều đc kèm theo 1 loại rau tươi riêng và nước sốt riêng từ nước mắm rất nhiều vị, nó là thế giới của VN, bạn sẽ rối loạn nếu tìm hiểu về rau tươi thảo mộc ăn kèm, chỉ những người có vị giác rất tốt mới khám phá đc hết về nó. Văn hóa bánh ngọt và cafe của ng Pháp đc việt nam biến tấu đậm đà vị hơn rất nhiều, bánh hay kem sẽ có thêm trái cây tươi đủ các vị, hay cafe, cacao, thạch... khi bạn đi chợ, bạn sẽ bị thu hút bởi các sạp rau vô cùng phong phú và đa dạng, đặc biệt nó phải thật tươi xanh là yêu cầu đầu tiên của bếp Việt. Tiếng Anh của tôi không tốt, bạn có dùng dịch nhé pro.

    Paddy - lovely storytelling, nice flow, deep and immersive as always. But I also thought there were a lot of blurred shots, erratic camera movements and hence, hard to focus in lots of scenes. Your videos are 4k high quality and I really like them but just some feedback on this one...

    Vietnamese dishes use fish sauce to marinate, so dishes such as meat, fish, etc. are marinated with fish sauce and spices to make Vietnamese dishes have their own unique flavor. unique, delicious. Vietnamese people often use it with raw vegetables and herbs to eat. Helps to make the dish balanced, easy to eat, good for health. It can be said that "fish sauce" makes up the soul of the dish.

    Common western misconception: it's not French baguette. It's French-inspired baguette. French baguette is made with wheat flour. Vietnamese baguette is made with rice flour. Rice flour gives the bánh mì its lighter, airier and crispier crunch when you bite into them.

      We call bread in England French baguettes, it's habit. We know they aren't from France, it's just a saying. It's a misconception that Vietnamese bread has rice flour in it. That stems from a wildly popular and wildly misinformed blog post from years back

      @@theroamingcook It's not a misconception. Traditionally, bánh mì is made with rice flour. In fact, Vietnam did not have wheat flour back in the day and that's why they used rice flour as a substitute. How much rice flour is added and in what ratios I do not know as I do not bake my own breads.

      As Vietnamese, I confirm that Vietnamese bread is not made from rice flour. it is ridiculous to think that Vietnamese bread is made from rice flour, rice itself is gluten free, so you can made any kind of bread with rice ou rice flour without using any additional substances.... And you can not call Vietnamese bread by Vietnamese baguette ," baguette" word means a long, narrow French loaf, does vietnamese bread look like a narrow, long one ? Lol but is a habit, so no problem to call it anyway 😅

      Vietnamese baguette is 90% wheat flour and 10% rice flour compared to just 100% wheat flour for French baguette.

      @@heeheehayftw3905 This is correct. I have made my own so it is most def made (mostly) from wheat flour. The rice flour is only used to lessen the heaviness of wheat bread.

    Tip for crossing traffic in Vietnam:
    Many tourist foreigners scared of traffic in VN . The rule to win this fear is keep routin slowly walking when you across of streams of motobike! bykers knows how to avoide you themself in chaos-order! remmember do not runs and stop suddently , accident immidiatly ! Don’t be affraid and do if you want to be safety every across the crazy- traffic in Vietnam.

    Some seriously delicious looking food! I think I ate at all the wrong places on my first trip to Vietnam. The only thing I remember is a spring roll that was stuffed with too much mint.

    Banh mi 25 is so awesome, yes not gone on the Pho cuon, but Banh cuon is amazing in Hanoi. Bun cha is incredible too with the leafy greens. Keep the videos coming guys awesome viewing 👌

    Man this episode made me miss the amazing Hanoi food so much! So nice to see you at Banh Mi 25 - I stayed in Hanoi for 2 months after my south to north bike trip and I ate there at least once a day for lunch and sometimes more haha, hands down the best banh mi in Hanoi, the staff were so friendly as well. Looking forward to the bike adventure continuing!
    You probably already know but just a heads up that your shutter speed looked too low in this video, giving it too much motion blur and making it "blurry" as people have said :)

      @@jomontanee Always make sure your shutter speed is at least double your frame rate :) so 24fps - 1/50 30fps - 1/60 60fps-1/120 etc etc

    Dont get confused of Bún Chả with Bún Cá any more Paddy. Hanoi also have many dishes of rice noodle, such as: Bún Thang, Bún Mọc, Bún Bung, Bún Đậu, Bún Riêu, Bún Ốc, Bún Ngan, Bún Vịt, Bún Sườn chua, Bún Hải sản...

    bahn mee with fresh bread but I would have some extras and chilli. then beef pho with either meat or seafood with noodles in the soup just superb. I have had it regularly in Australia.

    Phở cuốn isnt the "meat in pho roll in rice paper" , its the pho noodle, in sheets instead of strip noodle , rolling with meats and herb. so same noodle, different meats and stuffs.
    phở is what we call the noodle, not just the dish as a whole

    If you are returning to HN after your trip to SG, you should do a video while on 'xich lo', the bicycle with the carriage up front. You can travel around the city with the camera right in front of you and at the pedestrian level. That would be something to see. You can also do this in Hue. 😀

    Heyo mate, great video, glad that you've enjoyed Vietnam so much! some notes for future projects, if you looks closely you can see the ghosting in this video particularly, I'm assuming that you filmed this video in a different frame rates as your other videos that's why you rendering it at 25FPS/Hz instead of the normal 60 you usually do. 60 doesn't divide to 25 evenly hence the choppiness and ghosting as your computer had to create those missing frames in between ( Frame Interpolation). I again assumed that your fellow youtuber friends had his camera settings at 24 fps and the 1 frame of differences also have the same effect on rendered 25 fps footage. I don't know if I explain it very well but one way to resolve this issue is to put the whole project/timeline settings at 24fps/hz instead. Just some constructive criticisms, been enjoying your videos a lot. Cheers!
