No, this is just a sauce. Use this as the meat layer for lasagne, for example.
Dude the video starts after he's already started cooking, no intro, no ingredient list, no anything. He was obviously already started. And then the end just happens, he's not even done the sauce. It's very a chopped up video
Yea they could have done with a few extra minutes, but the meat of the recipe is there. This isnt exactly something that needs to be done to a science like baking. Its just dump and cook and render out fat. EzPz. Just time consuming.
Add pineapple to the blended carrot/onion though. Equal parts pineapple and carrot is what I do. Makes it taste soooo bomb.

He cooked the beef and veal shanks for 24 hours before the scene has started.
Here's the vegetable ratio: 3 carrots, 1 onion, 1 stalk of celery,1 tomato, 1 bay leaf, a couple sprigs of thyme.
Peel carrots, leave the onion whole,
First skim all the fat and bits after the beef has come up to a boil. Then add the vegetables. Cook for 8 hours

Watched the full video. Made the pasta and the sauce. MATTY YOU'RE A GOD AMONG MEN. I had to omit the veal shanks as they were frozen. But used brisket, veal ground beef and ground beef as well as short ribs and ox tail and bone marrow! Total cost for meats was $70cad. The cheese was $18. Worth it to make for some important family members.

Because it's part of the full 'IT'S SUPPERTIME' tv show. Vice (being a part of larger cable companies) would rather you go pay for an extended cable package in order to get Viceland instead of watching it on TH-cam.
They do a terrible job of advertising the fact that this is a tv show that I could be watching on Kodi.

Love me some matty
Some video's are for folks who already know how to cook. While this isn't a common thing amongst the younger it is definitely something that they have an interest in, it's just the skills and practice that are lacking. Videos like this aren't intended to be a page from a cookbook. You're supposed to watch them, and go, ok, so I have to do this, do that, do this, do that..solid reference.
If you came into this video going, "how do I braise something?" I'm pretty sure you're expected to go and learn how to do that, then later braise all of the shit that he tells you to braise.
While the full show is better, longer, more intensive, these videos are yes, like has been said, a trailer for those, but also a "quick and dirty" for those of us who have already been through those early stages. I love them for that.
I've never made this sauce and I don't need to be told how to trim this or chop that and I love that I can come check out Matty on TH-cam and get a quick heads up that has me make something I maybe hadn't yet.
