A little tip to elevate the dish, marinate the chicken in a chicken tikka seasoning and pan fry or barbeque it. Add dried fenugreek leaves with all the masala powders he's adding. And if you want to thicken the curry(make it richer) add cashew paste. Have fun!
those are all good tips, i marinade in yogurt, with salt, garlic, ginger, turmeric, coriander, garam masala and a bit of cayenne(not much cuz it's hot) i wish i could get kashmiri chili powder. isn't it a lot more mild and tastier than cayenne? i never tried using it, i prefer tikka masala sauce over butter chicken. Tikka masala is my favorite. i just made a huge batch last week, i make the sauce and freeze it in batches, i always use coconut milk/cream instead of milk cream, and i always fry my onions first in half butter/coconut oil.

A little tip. If you have the issue that your paste comes bitter out of the blender, just sauté the onions and garlic for 1-2 min before they go into the blender. This stops the onion/garlic to produce a protective enzyme that produces this bitter taste while being "physically injured". It also might never happen to you, as it depends on the sort of onions/garlic you use.
Well just so you all know in professional kitchens we have that bowl filled with water. So the spoon or whatever gets kind of clean of the dish to use in another dish and in the end you clean all.
For most recipes measurements can just be a guideline since you can't expect all the ingredients to be consistent. How big are the onions, garlic cloves and tomatoes? How spicy is the chili? Exactly how much water will evaporate from your pots? And so on. In the end it's up to you to fine tune it to perfection. Baking, or rather making dough, on the other hand usually has to be pretty precise.

Also, just marinate and oven bake your Chicken before tearing it and adding it to the sauce. Much faster. Even if you cooked the chicken a day before ~ because it has dried up a bit, it will soak the sauce a lot better. Nice way to recycle left over chicken.

There's always food snobs and people who get triggered by someone making a dish different than them, who don't understand the evolution of cooking and trying new things. If we listened to those people 99% of the world's dishes would never exist.
Feels like things have gone from a show about Matty Matheson cooking, to a cooking show with Matty Matheson in it. The unpolished, unscripted, casual cooking Matty used to do was so enjoyable. Now this just feels like any other cooking show you can tune in and watch on TV. Can't wait for the next episode where it cuts to Matty on a couch with dramatic music about how he almost stuffed up something so super important and it almost ruined everything.
I would almost certainly marinate (garam masala, yogurt, maybe toasted and crushed cumin seeds, and crushed garlic) and brown the chicken before adding it to the sauce. Otherwise the texture can be pretty gross.
I think it works if you hit the right timiming, kinda like in thai curry some people only boil it in coconut milk. I wouldn't do it, but I've seen and tried recipes that work that way.
@Nabeel - I don't really have one. I made it less than once a year and usually refer back to the two books I picked up ages ago and tweak things for however I'm feeling. I just meant that marinating and browning as the OP mentioned produces better flavored and textured pieces of chicken in the end.
after 6 years, I have finally made this dish. I remember watching this video when it first came out and being mesmerized by the recipe. dont know why it took so long for me to finally step up and try it but I was not disappointed ! it is a bit disheartening to see that this was not the most traditional way of cooking butter chicken but that’s okay! I loved this dish so much that I will make it again very soon and I will try to incorporate all of the helpful tips and tricks from the comment section !
This recipe is as far as you can be from a traditional Indian Butter chicken recipe. Glaring mistakes not to be committed: 1) Never use tomato paste or puree and use fresh tomatoes. Boil fresh tomatoes submerged in water with little red chilli, bayleaves, butter, cardamom, ginger, garlic and onions. Once you see the tomatoes' skins peel off, take off the heat and puree the mixture and then pass it through a sieve. THIS IS YOUR BASE, not what you see here. Add cashew nuts if you want to take this to the next level. 2) Never cook chicken in the curry, you don't want a poached watery taste. Marinate your chicken in a little yogurt, red chilling, ginger garlic paste and lemon. Grill the chicken, or put it in an oven. You want a tikka in the curry!! Once the chicken's 80% done, take it off the heat. Mix it with the base and cook with more butter and fenugreek leaves.
I think you’ll be okay as long as you use chicken breasts. I tried both methods and the taste difference is there but there’s nothing unpleasant about the chicken cooked in the sauce. If you don’t have the time to grill or broil then you can just do this fine although it is authentic to partially cook it first.

You need it, and more.... In fact, he didn't add enough, the mistake he did, was to not let the cream cook a little bit. after putting the cream, let it cook, uncovered for about 15 mins, and yes put the chicken, just before putting the cream. The curry should have been thicker. Love from India.

This recipe is as far as you can be from a traditional Indian Butter chicken recipe. Glaring mistakes not to be committed:
1) Never use tomato paste or puree and use fresh tomatoes. Boil fresh tomatoes submerged in water with little red chilli, bayleaves, butter, cardamom, ginger, garlic and onions. Once you see the tomatoes' skins peel off, take off the heat and puree the mixture and then pass it through a sieve. THIS IS YOUR BASE, not what you see here. Add cashew nuts if you want to take this to the next level.
2) Never cook chicken in the curry, you don't want a poached watery taste. Marinate your chicken in a little yogurt, red chilling, ginger garlic paste and lemon. Grill the chicken, or put it in an oven. You want a tikka in the curry!! Once the chicken's 80% done, take it off the heat. Mix it with the base and cook with more butter and fenugreek leaves.
Yeah, cooking chicken in the curry is a risky move. The whole pot might taste like chicken scum if the chicken is not fresh enough

I think you’ll be okay as long as you use chicken breasts. I tried both methods and the taste difference is there but there’s nothing unpleasant about the chicken cooked in the sauce. If you don’t have the time to grill or broil then you can just do this fine although it is authentic to partially cook it first.

My dad ran a successful curry house for 30 years yet I'm here watching a random guy cook instead. Good stuff. Was expecting cringe but he knows what he's doing but thats a lot of cream
You need it, and more.... In fact, he didn't add enough, the mistake he did, was to not let the cream cook a little bit. after putting the cream, let it cook, uncovered for about 15 mins, and yes put the chicken, just before putting the cream. The curry should have been thicker. Love from India.

Lol he made a lot of mistakes. 1) not marinating chicken 2) adding garam masala and fenugreek at beginning rather than the end (becomes bitter) 3) not toasting spices 4) not straining the sauce to make smooth
