- In this episode of How-To, Matty walks us through how to make a modern-day summer classic: back-alley ribs. These sticky pork ribs are first boiled, then finished on a barbecue and smothered with a traditional molasses-based sauce. The grill might be smoking hot, but we want that char guys! Sprinkle your dukka mixture on top with your fresh herbs, and finish with fresh lime and pomegranate juice.
Remember: ribs are about love, so don't share these ribs with people you don't fucking respect. World peace, trolls!

+Noah Hizon my guess is that Matty is, underneath all those tattoos and the foul mouth, a classically trained chef. One thing they teach you there, is that you gotta keep yourself spotless.

I just tried this today. Made the bbq sauce and everything. Skipped the dukka though.
The boiling technique for the ribs worked really well, super tender. Be careful though, it's easy to overcook the ribs at this stage and dry them out, and I also used a bit too much salt.
For the bbq sauce, I couldn't find pomegranates anywhere. I guess they're out of season? So I ended up just using a cranberry/pomegranate juice from the grocery store. Also some of the spices were expensive as fuck (clove, coriander, mace) so I opted not to use them.
Sauce turned out SPICY AS FUCK. Was delicious, oniony and garlicy, although not quite as sweet as I normally like. I guess that's what the pomegranate was supposed to be for.
If you're not so tolerant to heat, maybe use fewer jalapenos or add less cayenne. If you're like me and can't find pomegranates anywhere, I recommend adding a few tablespoons of sugar. I ended up using an entire sauce plan of the bbq sauce while grilling, so don't skimp on your sauce.
Overall I would definitely recommend you try making these yourself, but with a few minor tweaks to the recipe.

Love Matty, but I'm from Kansas City and if I served these ribs I would most likely be killed for the par-boil sacrilege. I bet they are really good, but everything from the preparation to how the sauce was made goes against the rules of great bbq.
