THANK YOU!! The recipe I was using said to melt the sugar on its own, occasionally swirling the pan. It never worked - the sugar was too thick and wouldn't dissolve evenly and when I'd pour it out it was too thick to coat the pan. This is the answer I was looking for.

Hi Urassa Ya! Yes it’s okay to use brown sugar, but for me it’s not easy to tell if the sugar is already caramelized unlike when you use white sugar you can see the process when color changes to golden yellow then to amber color so I prefer to use white sugar..

Hi, you’ll have to transfer immediately to molds or ramekins once the sugar caramelized.. by the way which way of making caramel are you referring to..
Just make sure to cook it in medium heat and once the color starts to change then set to low heat to slow the process until you achieved your desired color of caramel..It’s very important to transfer immediately because it will become thick and dries up quickly..hope it helps..

The wet method is simple and easy..use a heavy bottomed pan, combine sugar with water then heated..once the mixture comes to a boil Let it cook without stirring it, water will evaporates and the sugar begins to caramelize, watch carefully caramelization happens quickly, hope it helps.
Hi Karen! kapag nilagyan ng tubig slow process po ang pag caramelize ng sugar hindi ito madaling masunog, kung magawa ito ng husto same results lang talaga sila.. dry or wet method..depende po kung saan mas madali para sa iyo,.salamat po sa panonood!
same problem with mine, it takes practice and right process to achieve caramelized sugar. Sakin, 3 failed attempt 😯 pwede ba ma reused yung rystallized sugar ?

Sa akin hindi ko na po ginamit tinapon ko nalang, at hindi na po siya magiging caramel kapag nag crystallized na..try niyo po maglagay ng asukal at tubig sa pot..pabayaan niyo lang siyang kumulo over medium heat, tapos pag nag starts nag mag change ang kulay pwede niyong hinaan na ang apoy para siguradong hindi ma overcooked..may mga tips din sa description sana makatulong salamat po!

Then I'm definitely going to try this. I had the same issue. I ended up with rock hard sugar candy. Can't wait to try again.
It’s supposed to crustalize, I’m Mexican, you pop it into the oven with all the ingredients on top after and it will melt and stay melted

every time i do this is crystallizes and all the water evaporates, sugar never melts

It will change once the water evaporates, continue to cook until the sugar is caramelized..
