      Whats the deal with bone broth? being a chef i have been making broths and stocks for decades and i use bones to make them so why bother calling it bone broth and not just broth ?Thats like saying i am going to buy a wheels car. Wheels and the car come together obviously just like bones are used to make broth. Why the distinction????????????????

    Slow cook meaty or marrow bones with collagen on them for 48 hrs (yes), with 2 table spoons of apple cider vinegar to release bone minerals. When cool skim fat for cooking. Warm the jelly in a pan (skillet), whisk the sediment (good stuff), add a stock cube , seasoning, and thick cream, for a great restorative meal/drink.

    I love having a big bowl of it with thyme, oregano, ginger powder, file powder (as in the stuff you put on gumbo), salt, potassium, and about 5-8 drops of Stevia liquid (used to replace the sukiyaki sauce we used to use before I dropped soy and gluten). I slice up some pickles and use a big Chinese spoon to have a couple of fresh cold pickle slices in every spoonful. It's incredible.
    I use the "dog bone" beef femurs from the butcher (which are super cheap, like $2/lb), and as I'm mostly carnivore, I save all my ribeye bones in a bag in the freezer, along with some extra fat trim, and add that in as well. Add some pig feet and you've got a great 48-hr bone broth with enough fat and marrow in it for a meal.

I also add Tabasco, a couple of drops of black sesame oil, and some chopped chives. I’m on 6/18 MWF, so if I’m coming off a fast, meaning I skipped breakfast, I may make it egg flower style.

      Better to buy than not have it at all, but it is so so easy to make! I save bones and vegetable scraps in the freezer and every few months make a few batches from them (you can reuse the bones 2-3 times and still get the good stuff, gelling and all). No bought version even comes close since I can make it to my taste, know exactly what’s in it and how gelly vs. diluted it is. And it is ridiculously cheap! I get so much from each batch, it lasts me 3-4 months even after sharing 30-50% of what I make with friends and family. I use it in all my cooking and it makes everything taste amazing. If one has an instant pot or similar it’s especially hassle free. Its literally a couple of hours 3-4 times a year and using kitchen scraps that would’ve otherwise gone to trash.. Buying may still be the choice for some, especially if money is no issue, but just wanted to add that it is easier and way cheaper than one might think to make bone broth. You don’t have to be all super cooking type of person at all.

    I use the Bone Broth with Redmonds Season Salt, Cayenne, and I add Nutritional Yeast. Makes it really hearty without adding bulkier items. And for the (dunno if this really works) high cholesterol, I blend/whip Olive Oil into it. I know it may not be the best fat source when the water is just below boiling, but seems to work for me for kicking the system back in from a fast.

    Make mushroom gravy/sauce with cream and mushrooms 💁. (My broth already has ACV and onions/garlic as it's from Lamb Shanks we had the day before, but add these if it's store bought broth).

  • @1chienandalou
    @1chienandalou 4 ปีที่แล้ว +1

    I save bones and vegetable scraps in the freezer and every few months will spend a few of hours to make my own in the instant pot. I can adjust the taste how I want, it literally costs pennies compared to store bought, and I can adjust to taste how I want. Every time I make, I share up to a half of it with family and friends and still have enough left over to last me about 4 months. I use the broth almost every time I cook and it’s both healthy and delicious. Are use an instant pot so it’s fast and convenient and no problems getting gelatin out. It is ridiculously cheap since most of the ingredients would’ve been trash otherwise. I’m not some crazy fancy cook either. Just wanted to add another endorsement for homemade. Store-bought is probably better than none, but DIY is easier, faster and tastier than you’d imagine, especially if you’re on a budget.

    i add some saurcraut to my bone broth after it is cooked for 4 hours in my instant pot. The key is getting the right bones. Beef bone marrow bones with some meat on them and chicken or cow feet work great at producing a gelatinous broth with a fat cap on top.

    Everything online says to skim the fat off of the cooled homemade beef bone broth. But, Thomas said to add coconut oil to the morning concoction in order to add EXTRA fat. That makes it sound like I shouldn't skim it. I'm hoping some of you could help clarify this for me. I'm super excited to start my new improved life-style!

    • @1chienandalou
      @1chienandalou 4 ปีที่แล้ว +1

      loular08 You can do however you like. I make multiple batches from the same bones and sometimes mix them, but often I will save thicker/fattier and thinner separately and use accordingly. Like if I’m already making something that has meat (ergo fat) in it, I might choose the lighter broth, but I can use the thicker one for vegetables or soup and not any other fat.

    I have read that concentrations of glutamate get excessively high when you simmer bone broth on the longer end of the spectrum. One of the problems that can arise from excessive glutamate is actually leaky gut, the opposite of gut health. I'm not saying bone broth isn't good for the gut I am saying tho that too much glutamate is, and that bone broth if cooked very long is very concentrated in glutamate. This wouldn't be a huge issue for people eating healthy who aren't sensitive to glutamate, which some people are. Otherwise healthy people can still consume too much glutamate but this would not occur from one bowl of bone broth. However if you ate a lot every day it may, or if you eat processed food, which is loaded with "artificial" glutamate such as MSG, hydrolyzed proteins, yeast extracts and natural flavorings. See all those things are very high in glutamate also.
    Anyways, hope someone finds this helpful or perhaps may even learn they are glutamate sensitive.
    Side note: bone broth is very concentrated in aminos like glutamate and I don't believe it's good to overload on aminos. We know it has a negative effect on your body's ability to produce it's own in the case of aminos the body makes and I also am wary because of the hypothesis I put stock in that cancer is metabolic. Without rambling longer on this tangent I'll just say that cancer cells ferment metabolites for fuel instead of respirate for fuel. They generally ferment glucose, but they can in most cases ferment other metabolites such as glutamine, l-arginine etc etc. Anyways I could dive deep on this but I'd rather not have excess fuel for cancer on hand all the time. To reiterate the other point I made earlier glutamate is non essential meaning the body makes it. If we overload the body with glutamate this has a negative impact on our body making it over time, similar to how overuse of antibiotics will reduce the effectiveness of your own immune system

    Thomas: An idea for a future vids: How to reconcile keto with the Blue Zone style diets. I'm on keto but want the benefits of the Blue Zone cultures. Perhaps alternate on occasion.? Maybe break it down by drinks, coffee, teas, goat milk, sake. Cannonau wine of Sardinia. There are lots of veg so that should not be much of a problem. Fruits ? However, purple sweet potato is very common to eat daily. Also, breads, what is the difference from how they make it, fresh grind? Mugwort is common, used in rice, sake along with bitter melon. There is a lot to learn here, just need help to sort it out. I'm referencing a book I recently got from a thrift store by Dan Buettner "The Blue Zones... 9 lessons for living longer" Nicoya, Costa Rica eat daily, corn tortillas, beans, corn almost at every meal along with papaya and mango. I miss the tortillas !! Thanks for all the information you put out there.

    I cook it up from a giant bone I put in my tall asparagus pot, perfect fit; cooking by removing, storing, and adding additional water till it can be poked through with a knife and freeze up a bunch of these containers to use mostly for rehydration of anything, mushhrooms, thinnest of rice noodles, or just throw some RINSED quinoa, dal, lentils, or even beans, etc. for an instant meal.
    Also any FATS will S L O W down any insulin response and using a thick sludgy bone broth feels even better. Not piggin' out on carbs, however everything's moderated for the very best results.

    Has anyone actually read the research that’s been published about bone broth and the concerns about lead being extracted from the bones?

  • @ratclifferob

    I saved the bones from lamb chops and put them in a pressure cooker with a bit of water, salt ,pepper and cooked until the bones where soft and chewable to eat. Will I get any nutrition like this or is it cooked too much ? This way I can eat all the bones and coligen.

    • @1chienandalou
      @1chienandalou 4 ปีที่แล้ว

      Robert Ratcliffe it’s probably OK, but there might be a limit to how much you can absorb from what you eat at once so might be a waste in that sense. Instead I save the bones From what I eat in the freezer and every few months make a batch of broth. The meat tastes better when not cooked in water IMO in the first place and then the broth lasts me a few months. You can reuse the bones until they fall apart to make multiple batches of broth. Super easy and fast in a pressure cooker.

      Yes. The blood is pushed closer to the periphery of the body when these vessels open, allowing for the internal heat to escape. You’ll likely feel hotter due to the thermorecpetors being stimulated as well.

    Well, thanks to the tips, so when the glycin in bone broth helps you sleep, maybe not drink it in the morning? Also I have low blood pressure and dialating the bloodvessels sounds like the last thing I need while trying to wake up, I already have trubble with dizzyness and even fainting . . . not what you intended, but realy thanks, now I'm aware of this and make sure to consume bone broth in the evening so it will not get me into trubble

    I'm curious as to how much to use is okay when cooking. Like, if I replace the water or part of it when cooking certain rice or other meals. What's enough or not wasted by the body, if so. If I made a cup of rice, should I go a cup of broth or half and half? I'm a picky eater so I'm looking at things I already can eat to just add it.
