    Recipe
    Ingredients:
    Spinach: 2 handfuls
    Cooked rice as per requirement (I have used 1 large bowl of rice)
    Garlic cloves: 5-7
    Ginger: 1 inch
    Green Chilli: 1
    Coriander: 1 handful
    Cloves: 2
    Cardamoms: 2 Crushed
    Cooking oil: 2-3 tbs
    Bayleaf: 1
    Turmeric powder: 1/4 tsp
    Kashmiri Chilli Powder: 1/2 tsp
    Coriander powder: 1/4 tsp
    Salt to taste
    Method:
    Our first step is to blanch the spinach. Blanching not only helps retain its lush green colour but also locks in nutrients. A brief plunge into boiling water, followed by an immediate transfer to an ice bath, halts the cooking process, preserving that vibrant green hue.
    In a blender, let's combine a handful of coriander, a green chili, a few garlic cloves, ginger and our blanched spinach. Blend it into a smooth mixture and set it aside.
    Next, heat a pan and add some oil. Toss in whole spices - a bay leaf, cardamoms, and cloves. As they sizzle, they release their essential oils, infusing our dish with aromatic flavors. Now, add finely chopped onions, and let them cook until they're soft.
    Add our ground spices and broccoli florets. Cover and let them cook, allowing the broccoli to become tender. Next, stir in some peas, and again,
    let it cook covered.
    Now for the star ingredient - our spinach mix. Pour it in, and let the flavours meld together beautifully. Once it's cooked, gently fold in the cooked rice, ensuring it's well integrated with our spinach mixture.
    Serve this delightful Spinach Rice with a side of yoghurt, some cucumber, and red chillies for a complete, nutritious meal. And there you have it, a simple yet deliciously healthy dish that's sure to please your palate
