Made this today! Didn’t have a mixer so whisked by hand. Also used normal sugar as I didn’t have caster sugar. Turned out wonderful, I did have to bake it longer though. At 50 mins 150C it was raw in the middle, so I let it continue baking for another 10-15 mins on 155-160C and it turned out great! Thank you for yummy cake.

Gently melting the butter and cooling it down before adding to the eggs is such a game changer, it’s unlike the usual creaming method but works so much better. I will alter the ingredients in the future to add a little lemon juice for extra flavour, but for a soft and fluffy vanilla cake this recipe is the best I’ve come across so far :)

thanks for the video. Using a machine for the flour addition makes a tough cake. Flour should be folded with a spoon or spatula, and no mixer should be used once the flour has been added.
Thank you, appreciate your thought, you can use a spatula to mix the flour as well. But even with spatula if you over mix, then the cake become dense. Basically with this recipe the mixer at lowest speed takes less than 30 seconds to mix in flour evenly in the batter without loosing the trapped air (keeping the volume) that helps to make the cake fluffy and soft. This also helps the cake to rise evenly while baking 🙏☺️
I would highly recommend the Kenwood Chef XL stand mixer for this part of the process. Mine comes with a folding blade that is both gentle and thorough when operated on the lowest speed setting, and it has enabled me to create the most delicate, pillowy soft, cloud like cakes ever. Chiffon cakes, sponge cakes and even castella cakes are now all within reach thanks to this amazing folding blade, and washing up is a breeze.
Hi yes you can, I recommend to grease it slightly before adding the batter, I experienced otherwise , sometimes it was bit difficult to remove after baking Also watch out for oven temperature, or place the cake tray in a water tray to prevent cake burn in the bottom with aluminium heat up quickly.
Hi nice recipe will try this tomorrow… but I have a little problem with my mini oven..if I don’t increase it to 230 which is the highest temperature it won’t get hot or bake my dough(s) Any help on this? Mostly cakes are meant to be baked at 150c for 50minutes
Hi, if you could get a oven thermometer to place in your oven you can see the actual temperature inside of your oven ( probably your oven may not be heating up to 230 even it says 230) . So you can adjust temperature as required. Hope this helps and happy baking 🙂
I would say three days in a high humid climate, but need to keep it covered (not wrapped ) in room temp. In a dry climate possible up to 5days, again must keep covered in a box.

You can, also you can heat the milk to 70C then cool down to room temperature helps to increase the self life.

Yes actually, whipping egg white helps for cake to rise. Here we use deep tray and whipping egg white helps to make cake softer as well.
