From the Bay area, SF bae pinay here. I jus came back from the homeland philippines. My favorite dipping sauce for the lechon kawali is the soysauce with Calamansi with a bit of vinegar. The reason was but the calamansi fruit is slightly acidic and naturally sweet. This brings out the flavor of the fat and also manages to not make it taste oily. The brown sauce is mostly sweet and tastes good as it does make it creamy. Although, if you’re tryna jus binge down this meat lol. Soy sauce combo ftw. I love eating the fried chicken dishes cause they don’t skip out on making the chicken tasting juicy and the crust is excellent. The fried milkfish bangus I like the skin extra crispy and the meat itself lightly fried. Also if you do go eat fast food in Philippines, all the food is farm raised. The animals are all free range so their meats def taste different. The only thing is finding a fast food that cleans their oil daily. Andoks is a common fast food, they do bbq chicken using charcoal!! I would say Filipino fast food doesn’t taste like fast food. It’s more like food that been prepped and cooked quickly. Most of the foods were not preserved and if it did, you can still appreciate how fresh it was. That langka dish is also my top fav. Binge eat it feelin healthy thinking you rating meat lol. And any sisig dish for daysss. List of foods I recommend not on the video: Turon with Jackfruit instead of fried banana wrapped in Lumpia wrapper covered with sticky sugar. With fruit ice cream or vanillaz Bulalo, clear beef stew with bone cartilage

chicken feet was popularized in the philippines by the filipino-chinese. became a mainstay at beer-drinking sessions. my dad, when he was still alive, always ordered chicken feet when he brought me to chinese restos in manila. whenever i see chicken feet, i remember him and our father-and-son bonding. good times.

Bulaklak is a flower in tagalog that resembles the pork masentry in chicharon bulaklak. It has a combination of crunchy and chewy texture. It goes well with beer or what we call "pulutan". 🍺

Thanks for sharing! Filipino food is like a natural Asian fusion with Spanish influence. Our food is confused, that's probably why it hasn't made main steam.... in a good way
New subscriber here. I love this because you're trying Filipino food on different aspects. From semi fast food that's Max's, to traditional dishes to street foods like battered quail eggs and skewers to authentic bread and pastries in Red Ribbon and more. I love my lechon kawali to be dipped in that mang tomas sauce(liver sauce) sweet and delish. But I sometimes like the other dipping sauce. The one that's made with chopped shallots, soy sauce, vinegar and brown sugar. Yup Filipino food has a lot of influences. But majority is from the Spaniards since they occupied the Philippines for 300+ years. The different pancit variants and siumai(siomai in the Philippines) came from the Chinese.
I like to start my lechon kawali with Mang Tomas for a couple bites but I need to eat the rest with vinegar dipping. The vinegar really cuts through the richness of the pork belly and therefore able to eat more😅
Lechon Kawali Sauce? I like everything. Vinegar with onions and chilli, Sarsa or gravy, Soysauce with kalamansi/lemon with chilli. Every Filipino Restaurants should have these of 3 kinds of sauces in lechon kawali.
This used to be the serving size and food quality with the Max's restaurants here in the Philippines 7-8 years ago. Nowadays when you go to Max's it's all just sad and not worth the price.
