If the sauce makes the brisket taste better then you need to reevaluate how you smoke your brisket cause if you are a true texan you can throw down.

That may be true for places like Truth, Franklins, Pinkertons, Killens and the like but for some places that serve lean, overly dry brisket it needs some sauce.

If you return for more BBQ, maybe try Killen's in Pearland, Blood Brothers, and Gatlin's.
If you return for Asian: Bori Korean Stir-fried sookju ribeye is the best under $20 lunch
If you want the best sausage ever: City Market, Luling Texas - this comes from someone that loves Scott, Louisiana smoked boudin
If you head to New Orleans, try Drago's and Pascal Manale's BBQ Shrimp - heck google it.

If I were a Texan I'd likely not be mad at being compared to Kansas BBQ or maybe one of the Carolinas or even Missouri . . . but California ? That's akin to comparing a Russian Lada to an Italian Ferrari, an Alaskan Chinook Salmon to a Louisiana Catfish, like New Yorks Gallagher's Steakhouse to The Old Oak Truck Stop in Spring Hill Tennessee, like a Rolex to a Timex . . . and maybe do a piece on Best Burgers in Chicago . . . that would be nice ; )

Steve! Could you PLEASE make a side trip to Austin and check out Stubb's BBQ? Here is the rundown on this place: In the 1970′s, Stubb’s restaurant became the heart of an explosive music scene. Stubbs was ground zero for musicians like Joe Ely and Stevie Ray Vaughn. Other famous musicians who would “play for their supper” included Muddy Waters, John Lee Hooker, Willie Nelson, Johnny Cash, Robert Cray, George Thorogood, Clarence “Gatemouth” Brown, Linda Ronstadt and the Fabulous Thunderbirds. Although small in size, Stubb’s Restaurant was always filled with good friends, great music and plenty of Stubb’s Legendary Bar-B-Q. The Lubbock location is now closed but the legend continues here in Austin at 801 Red River. Come on down for some Live Music, Cold Beer and Great Food!

Steve, my man! I think you ate about five flies during the filming of this video. My wife and I sat outdoors at Pinkertons, saw them buzzing, immediately moved inside. Second comment is that I'd never willingly get turkey as a full carnivore when beef is available, but if you are going to do it, I think you need to eat the turkey before the brisket (because brisket is much richer and more flavorful). Lastly, I agree with some other comments about sauce--don't do it (not on brisket). Enjoy the smoke, the beefiness, and the rendered fat, but putting sauce on brisket is gonna get you kicked out of Texas! (Texas sauce isn't that great anyway, LOL.) Also, Pinkerton's brisket is good (really smokey), but their pork ribs are dry and overdone.

Not sure why anyone would wait in line that long for BBQ in Texas and it not be for Franklins in Austin…that’s the best BBQ you’ll ever get hands down.
