I met Amir when I went to Goldees and got to chat with him a bit as I was first in line so I was able to wander around. I live in Southeast Texas, and I've tried just about all the BBQ places down here and redbird is hands down the best!! Those cheesy scalloped potatoes are awesome!! The meats are good!! That green onion & cheese sausage is legit!! Great job Ant!!!

Redbird is awesome! Some of the best BBQ I've had in Texas. Everything is made from scratch, even the mayonnaise he uses in the Caesar slaw. Try the chocolate chip bread pudding he makes from left over dinner rolls on Sundays. Koobideh sausage is great with the homemade pita and whipped feta.

Great story Amir. My first visit to Red Bird was on a Wednesday for the Smash Burgers, they were awesome. We went back on a Saturday and got there at around 10:15ish thinking we could set in the A/C truck until you opened. We pull up and there is already 5-6 people in line. Have to say everything we got was extremely tasty. We had the brisket, pork ribs and my personal favorite the beef rib. I'm so excited that the Golden Triangle now has 2 legit BBQ places to eat at.
My Lil bro passed away 2 weeks shy of his 20th birthday. We set up a cardinal theme garden beside the house in his honor. I buy mom cardinal decor for every birthday and Christmas. Much love to you and your family! BBQ looks delicious!

Incredible video. The story is great. When he broke up talking about his brother Cody was it. Can't wait to try this BBQ. I'm already a lil bias; being that Ive for Fam on the staff(Zach). I'm a perveyor of smoked meat...period. South Texas does it right.
I opened up my own BBQ joint called BlueBird. #1 BBQ in Florida, we play rap and hiphop music. We cook 150 briskets a week, we have 2500 gallon smokers. We named our pits as well, Marty and Doc because we are from the future and no one can stop us.
I love the idea of introducing a middle eastern flavors to the sausage. I love texas bbq, but i love unique interpretations of it, since Texas is not just a state of mexicans and german immigrants anymore.
Ant, love your vids. There’s a place here in Tampa, Florida called the brisket shoppe that you should hit up if you’re ever in the state. It’s got Texas style brisket and bbq that I think competes with some of the spots out there in Texas. I actually had my bachelor party there. You should do a video there if you’re ever in the states
Thanks for the expense of experimenting. My thoughts about the creosote of the stack is what used to happen when I first started. I consistently got the bitter smoky taste. That was with no flame, dirty smoke, and unburned fresh logs throughout the cook. Later, smaller splits with an open flame and mostly closed stacks worked. The pit wasn't sealed. The fire was open flame but temp was low as I could get it and flame was controlled by keeping the least amount of wood with the cleanest flame and continuously feeding small splits to keep the coal bed. The bark was black, meat tender and pink, but juicy and tender. Almost perfect. But took a lot of attention.
Me and my family love good Bar B Que. We will definitely take a drive from Pearland to try this. Love the story behind the Bar B Que and it all looks delicious. Can't wait.
