    50 years ago as a boy, I worked in the premier bakery in La Jolla, CA with my mum. A secret ingredient we put in the carrot cake batter, I will now share with you since the bakery is no longer there. Based on your amounts there, fine grate one half teaspoon of fresh ginger. Adds an exotic flavor that's unexpected. Hope you like it.

    So easy and perfect recipe.. I made yesterday for my husband's birthday. I replaced oil with butter, and used half amount of brown sugar and half of white sugar instead of complete white sugar. I added chopped dates too. The taste was heavenly. So soft and most moistured cake recipe. Thank you dear jemma. 🙏♥️

    I have prepared it the second time with a small corrections (less sugar 10%..less oil 10 % ) and this is the perfection ! I am happy about this receip. I have used 4 pans for 15 cm diametr and i was delete the ammount of the ingredients for three as advised in a comments. Very very appreciate this video super clear and easy

    I only have one 8 inch/20 cm tin, so I baked two halves of the dough. As the tin is fuller this way, it took 55 minutes to bake! Hope this helps. :)

    I just made this but split the whole recipe by 4 because I just wanted to make one layer. It turned out to be delicious!! The cake and the buttercream are not too sweet or overpowering. And I used hazelnuts instead of walnuts & it turned out great !!

      I've always made my carrot cake with roughly broken up walnuts so they end up in chunks in my cake. This is my first time seeing a recipe with finely chopped nuts. May I know how much better you like Jemma's recipe compared to regular ones with chunks of walnuts in (I'm assuming you've had regular carrot cakes before ha ha just like the ones I'm used to baking).
      I'm intrigued by this but don't want to waste my ingredients before I know how significantly better the difference in the result it'll be. Thanks in advance!

    This is the first recipe of yours that I am trying out and also first time I trimmed the sides of the cake as in your video and although it seems wasteful, it really made a difference. This is a super delicious recipe. I made jt for a bake sale (after tasting it, of course) and it sold out fast! People who tried it said it tasted like it was from a fancy restaurant. This will be my new go to carrot cake recipe, thanks Jemma for the recipe!

      Hey, did you squeeze any liquid out of the carrots or just added the freshly shredded in? I want to try this recipe but in the past when I haven't squeezed liquid out its been tooooooo moist

    I am a carrot cake fanatic! My recipe is always identical to this EXCEPT I tried different ways to lighten up the amount of oil in it. My recipe calls for 1 1/2 cups oil but I use 1 cup crushed pineapple in it own juice and 1/2/ cup oil. Much better, not as greasy and the fruit gives it better flavor and it is still dense and moist. I've had marriage proposals over my carrot cake, it's that good. Try it!

    Just made this for my Dad's wedding! Absolute perfection👌 I omitted the walnuts, used cake flour, and added a dash of nutmeg and ginger. Chefs kiss!

    It's the second time I have made this perfect carrot cake. I put the trimmings in the freezer and a when I needed them, they quickly defrosted and layered the crumbly cake with pineapple chunks and chilled ready made custard for an emergency pudding! Nothing was wasted!

    I made this with two cake pan with 180°c at 60 minutes baking time and it turned out perfectly moist and browned with sweetness just nice for both the young at heart and little ones....Thank you so much Jemma😘

    Made this gem for a birthday, it was a huge success. I subbed the sugar to dark brown sugar and only used 400g. For the cream cheese icing I only used 437g powdered sugar but it was very sweet so I think it can do with less. This recipe is a keeper, thanks Jemma!

    I have a very similar recipe. I have never leveled mine out, just frosted the layers as is (for family consumption) and that outer stuff you cut off is almost crispy - due to all that sugar and oil. It is so yummy! Love your little carrot friends. Love your videos!

    Hi Jemma
    I tried your recipe , and it was a huge success. But I made some adjustements on sugar.
    For the cake , I used only 400gr and it was already a little bit sugary for my taste.
    I also added some grounded fennel seeds with anise star ,and I can't describe you the smell in just few words.
    Concerning the icing , I used just 2 cups and it was fairly enough. 900gr is tooo much. I added some pinch of lemon juice ,and it tastes better 😍 thank you again for sharing your recipe .

    I just did it. It is the best carrot cake i have ever tried😋 so moist and tasty. I did frosting differently that includes cream cheese, sweetened condensed milk, whipping cream and powdered sugar. That worked perfectly for ur cake bcz I want less sweet frosting. Thanks for the recipe ♥️

    Carrot cake is my favourite! I make it very similar to this. Just walnuts and carrots, no raisins or any of the like. I put a bit of ginger in mine though. To me the absolute best topping for a carrot cake is candied orange peel

    Fantastic cake. I only had 3 tins, so they were pretty full. For this reason they needed an extra couple of mins baking, but came out very cleanly Deliciously moist and I imagine it would keep well.... Will definitely use this again.

      I use both ginger & nutmeg as well. However I use a very light hand w/ginger, since it tends to easily steal the show. I suppose if you use finely chopped walnuts, you wouldn't need the nutmeg?

    A really nummy addition is crasins. I used to always add golden raisins but I didn't have any one day and thought what the heck. It' adds a nice tartness to the sweetness of the cake 😀

    Loved the recipe, I’ll certainly try it! Carrot cake is traditional in Brazil! But we do it differently, with a blender you mix the carrot with the liquids and then you mix the dry ingredients. The result is a bit different and we cover with a kind of sugary chocolate ganach.

      I've made a version of that cake with a recipe by Joconde's Baking, which apparently isn't 100% authentic according to the comment's section, but it was yummy all the same. Love the carrot + chocolate combo.

    I beat egg whites separately and fold through the mixture.
    And added bit more cinnamon too. And 2 teaspoons of ginger.
    Just baking and hopefully it will be very nice and fluffy.

    Thanks for the great recipe! The filling was a bit sweet for me so I decided to just use less icing sugar and more cream cheese on my second go and it turned out great.

    I've been using your carrot cupcake recipe as a cake recipe for so long! It always turns out perfect... i also like to add a little cinnamon to the cream cheese icing too.. :D

      Eloise Vriesman you don't have to add walnuts or any type of nuts, it just gives another flavour (I personally prefer carrot cake without nuts)

      You could put oats maybe? You might have to add more liquid though. Or you could add granola for a crunchier effect?

    Did the cake, but i didn’t put 1kg of sugar to the frosting, just 600gr because i thought that it was too much. And with 600gr it was already too much, unless you like your coffe with an island of sugar. The inside was perfect. Cheers!

    I halved all of the ingredient amounts and made a two layer version of this carrot cake and it turned out so delicious! i would definitely recommend making it if you are thinking about it

    I just made this and it was sooo good! I really loved the cream cheese frosting as well although for me I had to add quite a lot of heavy cream to thin it out since it was thick but it’s definitely a keeper!

      Almost 1000g of icing sugar that's too sweet. But love the cake though.

      Use brick style cream cheese then you can cut down the sugar by half. And while mixing, stop adding sugar once the icing holds :)

    Will it still taste good if I use hazelnuts instead of wallnuts? I dislike the little bitter taste that can occur with walnuts

      It will still taste good! Changing the type of nuts used won't alter the over all taste much so I would go with what you prefer. I like to make a carrot cake with coconut :-)

      perhaps dint use almonds though as you will get a bakewell taste to it.

    Made this last night (easy) for work. It was absolutely devine - moist and delicious. It went down really well with everyone, with comments like “the best carrot cake I’ve ever eaten”. I kept my nuts in chunks, which worked well. Will definitely make again.

      I though so too, but the ppl that made it said its good.... but... almost 1 kg for 200gr cheese soumds.... diabetes lol. I want to make it but i think i will go slowly ading the sugar

    Ohhh nice... I'd leave it semi-naked (leave off last coating of icing) in summer and fully frosted in fall. Beautiful both ways! Your carrot decorations are ADORABLE... omg SO cute.

    It says vegetable oil in the description but sunflower in the video - what do I follow?

      Sara Williams sunflower oil is a type of vegetable oil, so just use what vegetable oil you like or already have.

      To be honest, for the frosting of my carrot cake i took 500 gr. cream cheese, 100 gr. butter and about 250 gr. of sugar and thought: Next time 200 gr. will be ok 😂😂😂
      And i'm definitely somebody with a sweet tooth.
      In Germany, we don't like it that sweet i guess.
