- My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!

This year I decided to do something different for my wife's birthday. With absolutely ZERO experience baking, I decided that I was going to bake a cake, my first experience, as a way to show her that I wanted to do something special for her. It came out surprisingly delicious. She loved it. We all loved it. I am actually excited now to try other recipes. Your instructions are easy to follow. I THANK YOU so much for this.

@@snehadhanawade8226 You can use any plant based milk such as soy, almond, oat, cashew etc. I'm vegan & bake vegan cakes & I use plant milk all the time, you won't notice any difference.
How did u grate the carrots? With a food processor or like in the video?

I made this carrot cake, cream cheese frosting too! So proud of myself it came out sooo good & my family loved it. I also used the baking strips & my cakes came out flat & even! Gonna make it again this week!

Thank you for making this video. I made this cake for my husband's birthday this week. Thanks to you, it turned out AMAZING. He asked for "interruptions" so I added toasted walnuts to the batter, along with some soaked and drained golden raisins and currants. I also added a tsp of lemon juice to the cream cheese frosting along with one of vanilla and vanilla bean scrapings. It was so rich and moist it made us need a moment with our food.
It was the second time in my life I'd ever made a real cake. Thank you again!!💕
Recipe ingredients from the video (not the linked recipe)
• 1 lb grated carrots
Dry Ingredients:
• 2 1/2 cup all purpose flour
• 2 tsp baking soda
• 2 tsp baking powder
• 1 1/2 tsp salt
• 1/2 tsp cinnamon
• 1/4 tsp ginger
• 1/2 tsp cardamon
• 1/2 tsp all spice
Wet Ingredients:
• 3/4 cup sour cream
• 3/4 cup veg oil
• 1/2 cup unsweetened apple sauce
• 1 2/3 cup white sugar
• 2 tsp vanilla
• 3 eggs at room temp
• 1 cup chopped pecans (toss in flour before adding to batter)
1. Grate carrots
2. Sift dry ingredients
3. Mix wet ingredients
4. Pour wet into dry ingredients and mix
5. Add nuts and carrots and mix
6. Pour into pans and cake for 40-45 mins at 350
Frost with cream cheese frosting:)
Cream Cheese Frosting Recipe:
• 3 sticks room temp butter
• 16oz room temp cream cheese
• 1 3/4 lb confectioner's sugar
• 2 tsp vanilla
• pinch of salt
1. Cream butter and cream cheese
2. Add everything else and mix, ta da

With raisins it feels like people either love em or hate em; very few who say, "doesn't matter". Personally I don't like them in any baked goods and would never just eat some raisins but I always liked Raisin Bran cereal. Go figure

I haven’t baked in 2 years and my boyfriend wanted me to make a carrot cake for his birthday since we can’t go out due to the quarantine and let me tell you, this was AMAZING. Like so many others commenting here I too decided to venture out and try something new and baked your Carrot Cake yesterday. In a word…Awesome! I’ve got plenty of photos I took during the process and of course the final product that I’d love to share if that’s possible. Followed the recipe for a dinner party - used olive oil and pie pans so it looked messy but was the best cake ever!! So moist but not oily and delicious! My sweetheart loves carrot cake so I made it for him

I made this for my MIL for her birthday and she (and everyone) loved it. Very great recipe. I ended up doing a two layered cake though, and froze the third layer. Have me some extra breathing room on the cream cheese frosting (which was great). Thanks John for the great recipe!

I also grew up with carrot cake that had pineapple in it. Ppl just don’t know what they’re missing. It’s awesome! Just add in drained crushed pineapple when you add in the carrots, simple. Ohhh, turns up the volume and earns your loyalty, in just one taste. ⚡️💖⚡️

With your decoration, I had a wonderful thought of adding dark brown crumble on top to make it look like an actual carrot garden 😍😍 maybe like an orange/lemon zest cinnamon crumble 😗 I LOVE adding citrus zests into my icing. And I use walnuts in my carrot cake batter. I also like to make candies orange ribbons for my decorations with caramelized pecans 🥰 I’m going to give your recipe a try though but probably only half recipe hahaha
I always add pineapple and raisins to my carrot cake, which is a very similar recipe to yours, but I like the idea of the apple sauce instead of the pineapple, so am definitely going to try yours. I also love the way you decorated it, it is so cute!

Love the pineapple added. That's how I thought it should always be but then also coconut and some raisins also. Always thought a 1/2 c shredded zucchinni would be so good also. Then it would be so nutritious too and super sugary and then the cream cheese frosting makings it fantastic for the perfect cake - best of all worlds.

Hey John. Happy Thanksgiving. My family requested a carrot cake for today. I remember watching your video so I tried my first carrot cake. I downloaded the website recipe and followed directions. It came out great and everyone loved it. When I re-watched the video, I noticed it was a different recipe. Now I have to see which is better. Thanks again for the great food ideas and videos.
I have so far tried this recipe and the raspberry muffin recipe from your channel. My muffins turned denser and dry after keeping sealed in fridge. So, I didn't try them again. But, your carrot cake is really heavenly! It is amazing, moist and delicious! Anyone that has tried my carrot cake (cooked according to your recipe with less sugar in the cake) has loved it asking me to make it again. If it was easy to make, I would make it every week until I get tired of eating cake!
