Does Alcohol Go Bad, Stale or Expire?

  • Hard alcohol is a preservative, right? Well, you'd be amazed to find out that a great pure alcohol, like a Reposado tequila can still go "off" even in a three to six month period of time. So...what does that mean to you?
    It doesn't mean you're going to just be sick drinking your spirits, because it's not going to make you sick from any hidden microbes, but it may just taste a bit funny.
    Now, a liqueur under 17% may get thicker, lose more alcohol and perhaps could create some level of bacteria as the alcohol evaporates and the sugar sits for extended periods of time. Now, it's tough for many microbes to live in a lot of sugar, but it could crystalize, get thicker than it started or gel up a bit.
    In any case, maybe buying fresh bottles every now and again is a better idea?

    As an Italian wine collector with a decent personal stash (oldest bottle: a Porto sealed in wax 1898, some 1970, many 1980s and 1990s reds of strong personality like Barolo, Merlot and Brunello) I believe the key factor is light.
    Of course wine is far more delicate than liquor but I think being stored in a dark dry place and the total reliability of the cork/sealing is key in preserving and aging the bottles, of course along with average temperature.
    My cellar isn’t in a fancy 50m deep stone cave like many in Italy so I had to put an artificial climate control because of outside temperstures varying from +35* C in summer and -5* C in the winter.
    I did age a couple of whisky bottles for some years (3-6 staring from 10 and 12) but didn’t get any real actual difference in my single malts, experts told me once bottled the aging process stops outside of the cherry/oak casks.

      Exactly. Like you said at the end, once whiskey exits the barrel, the aging process stops so it won’t ‘’age’’ in the bottle. For example a 12 year old scotch will always be a 12 year old scotch even if it stays many years in your cabinet.

    Derrick, I've been watching a lot of your older videos the past week and I must say that I greatly prefer the ones that you do solo. Not that I don't like the people that you have had with you (in fact, I think I have a huge crush on that one blonde lady Jalethe), it's just that your videos are a lot more focused and interesting when you do them solo. Really great info that's helped me out a lot. Nice work!

      Thanks. So first, everyone has a crush on J, so that's normal. She's easy on the eyes.
      Second, the focus is intentional. My goal was to build a foundation of content I could refer to in order to educate people. In this specific series that was coupled with creating content people are looking for (good for search marketing). Lots of people ask if alcohol goes bad, so I wanted to tackle that situation.
      Those videos narrow in the focus intentionally to get the educational information to your brains. But...a cocktail? Anyone can do a quick search or use our cocktail database to get that--equipped with the educational content they can make a cocktail. So, my intension is to combine a "show" format with a "tasting" format along with give history and answer questions as we go through the drinks. The drink recipes (and reviews) are meant to bring casual fun and show / entertainment with the drink to break the barriers of "oh god this is intimidating." If you see a couple dumbasses able to do it, imagine what you could do at home?
      And, at the end of the day, given I can't make any real money on the channel I do what I want to do and what I have fun with and that is hanging out with friends drinking. So, for those that say "it's too long" or "you're just trying to be funny" or whatever, those folks can pound sand, I'm sure they can find a dry bartender in a suit to show them how to make a Mai Tai. If you wanna laugh a bit and have fun while making that Mai Tai...that's what CMC is for.

    I once had this bottle of homemade wine given to my grandma as a gift and she gave it to me. I kept it under my cupbaord and forgot about it, i never touched it and i noticed the color looked different after a long time it smelled like a strong whiskey.

    Thank God because I hadn't touched this medicinal Seagram's 80 proof stuff for 6 years since I retired from the Army; but, now that I'm helping my wife put together a "some assembly required cabinet" LOL!!!!, it is coming in handy along with the Ginger Ale I'm mixing it with.

    My grandfather has a bunch of old bottles of liqueurs that flat out don't smell like they should. Much of the flavor has degraded on them away from their flavor and more toward a sweetened grain alcohol.

    I found a bottle of Glenlivet 12 in my grandpa's shed and he said he bought it sometimes in the 70's since that's the last time he drank that brand. I tried it and must say it was very acrid compared to how smooth it would be if you bought it today. Still gets the job done though.

    I love Cutty Sark scotch, but the most interesting bloom comes off the flavor within 2 days of opening... very noticeable. I have not noticed this with other alcohol... I would say I don't keep anything around longer than a week, two at the outside.

      2-3 weeks is a really shot time. From what I know if you bottle is less than half full, the taste shouldn’t change for at least a few months even years

    I drink a lot of scotch and can first hand say from the moment you open the bottle the flavour profiles start to change. Sometimes for the better sometimes for the worse. A peated whisky will always loose peat flavour once its opened.

      I can relate after having had a bottle for a month to a month and a half it isn't nearly as smokey is it was (it is a Johnny walker black label)

      Exactly. Happened to my Lagavulin and I wasn't too pleased by the flavor after the 3rd month. Speaking of peaty scotches, what is your favorite? What would you recommend to someone new to peaty whiskeys.

      @@grinchstones8525 I’m not super experienced with smoky scotches but I’d recommend Bowmore 12 for a good Islay starter. Johnnie Walker Black is less smoky but also very good. For a cheap blend, I recommend Famous Grouse Smoky Black 💨

    I found many unopened bottles of various liquor when cleaning out my Grandpa's place after he passed away, but none of it was drinkable since it seems to have somehow evaporated while in the bottle :(

    Hey so I found a bottle of whiskey in our storage space that was together with a bottle of rum and some wines which my stepdad got from business relations years ago and the stuff had been stored there for 6 years and I am going to try it after we get back from holiday also I should say that it was never opened but have you ever had something like a good whiskey you got stored away safely and found years later and was it still good

    Will the AC/Heating vents ruin an unopened bottle of whiskey at 70 degrees? I keep my unopened bottles stored high on a shelf away from kids reach and there’s a Vent next to my alcohol was just wondering if it would effect the alcohol over time. Thanks

      I don’t see why, unless it causes evaporation from the bottle but that would mean the bottle isn’t sealed well

    chartreuse is claimed to improve with age, even once the bottle is opened. I don't know how true that is...

    Do you recommend storing alcohol in the refrigerator? I keep my Cabo Wabo and Schwatzhog in the fridge.

      nope, I would recommend not keeping them in the fridge, it does nothing for them (stability wise) as you still have oxygen in your fridge. And, it brings down the temperature which alters the dilution rate when making cocktails and alcohol opens up and has better aroma and flavor when water dilution is correct.

    One point you ignored is that freezing and refrigeration will slow down all chemical reactions significantly, though it may have other effects.

      Yeah, I don't promote freezing and refrigerating spirits very often because it ruins the taste experience, changes the dilution in cocktails, etc.

      Yeah, I'm just getting into spirits, my Vodka, gin and Jager are in the freezer, but I keep my rum and whiskey in cabinents.

      yeah, the only issue is if you use that vodka/gin/jager to make cocktails it's going to impact your ice dilution when shaking and you won't have enough water to bring out the right flavor and aromas.
      Drinking them straight, that's all fine, except it numbs your taste bud/senses and diminishes the overall flavor. But, I know folks like Jager suggest this, usually it makes the spirit more palatable to the average consumer by nullifying some of the ethanol impact.

    So my neighbor cleaned out her fathers liquor cabinet a few years ago and gave me a variety of liquor bottles. One is a bottle of Crown Royal, never opened in bag and bottle, with the label date of 1965. We have a few discussion as to whether it would still taste good of just keep it as a conversation piece. Like to know your opinion.

      depends if you like crown royal, this isn't like wine, it's not going to get better with age. That being said, the recipe they used in 1965 could be entirely different and, in fact, better. But, if you don't like crown, leave it for conversations :)

    Check it out: I have this bottle of Jager I bought for the weekend. We drank half of it and when we went in our DD’s car to take us home one of my drunk ass friends threw the cap out the window. Will it go bad by next weekend without the cap?

      When my caps break, or crack I usually just put Press & Seal on the top. I also have resealable slow pourers I've used in the past (but they don't fit on every bottle). Leaving it exposed to the air allows little creatures (fruit flies) to get into it as they love it. Of course, it may not be the season for those depending on where you live. The only thing that usually happens besides that is the alcohol may lower as it leaves the bottle in the air over time.

      if you want to, as I said in this video, you're not going to die, it's alcohol and it preserves. But, the heat no doubt evaporated some of the alcohol, it's probably going to taste "off", but if you wanna.

      just as we talk about in this video... it's no different, the alcohol may oxidize a bit and loose some proof over time especially if there is a lot of air in the bottle (or you leave a liqueur pourer on it). Vanilla extract is usually about 35% alcohol (conveniently so is vanilla vodka), so it will probably out live you.

    I kept my whisky in car which is in open sun area & forgotten the take, later next day I found little bit leakage & smell from cap of bottle.Now this whisky was got bad or not.

      if you're asking me a question, then maybe? try it. UV light will break down the product and you'll probably find it has less alcohol than before or may taste "not as good."

    Hello I have 2 bottles of Polish Rectified Spirits (one is 192% proof from 2010 and one is 151% proof thats from 2009). At the beginning they were both clear. But now in 2018 one is a brown color and reminds me of chocolate and the other is yellow for some reason it tastes fruity. Even though they were so high in proof back then, I took a shot of the brown one and felt no symptoms of tipsy/drunkeness or even no nausia.
    Would it be safe to even continue drinking these beverages? I messaged a friend and they said it must of fermented somehow but this is pure ethyl alcohol. I did not add anything to it.

      you cannot ferment a distilled spirit, but it can oxidize, was it near the sun at all or in direct sunlight? What type of seal is on the bottle? Perhaps the seal wasn't designed for that strong of spirit?

      Actually it was always away from sunlight in my closet when being stored. The seal is a metallic twist cap, similar to a Bailey's twist on cap.

      That's strange, it should be fine but discoloring is very strange. It may still leak if it was opened, which could reduce the strength of the liquid.

    I have a bottle of Jose cuervo silver (brought it for my friends to drink so they dont touch the good stuff) that has developed debris floating in it. They are like white flakes and I was wondering of this is bad or not ? Thanks

      I've not seen that before, I typically don't drink things with white flakes or debris, that sounds bad. Is there a cork on the bottle? Did any of it sheer off into the liquid?

      ***** No cork, just the original lid that came on the bottle. The bottle has been opened maybe 5 times in total, with not much being used. Its not top quality stuff, but money is money and was hoping to salvage it.

    Wondering about rum; will the fact that it is made mostly from "sugarcane byproducts", will that make it god bad or faster or slower? And would heavily spiced rum go quicker than a non-spiced?

      I'm not entirely sure, however the ones I have (as I have a lot of rum) still taste tasty, but we'll have to find an old bottle and get a new one and see.

      it's not going to kill you, but it might not taste as good as it did. Expiration dates are usually recommendations by the government for specific products, it doesn't mean the product instantly goes bad. Usually when they get really off, they'll start to over carbonate and when you open them they'll foam (at least beer).
      Remember, alcohol is both a stabilizer and, technically, a poison to your body. So... are you asking if you're going to get food poisoning from an older bottle of cider? Probably would get that on day 1 if you drink too much of it.

      do your research, it sounds good, but it's also not true. Yes, there are some glass that will block UV rays (e.g. house windows, car windows)...beer bottles, wine bottles, liquor bottles coke bottles? Do the research, read the science, the physics and the facts about "why beer goes skunky" and all the rest of the work others have done and you'll understand it a bit better.

    Gas your spirits collection with Argon gas once the bottle is opened and gas it every time you open it. It will last for years.

      at 5:50 you said the alcohol will eat away at the cork and its not cool. Sometimes when a bottle of whiskey or wine or just about any kind of booze is aged longer with a cork it actually tastes better. It will taste different sometimes but most the time they only put corks which are made of oak on alcohol made with oak barrels. Also it takes a long time for a cork to get ate away from alcohol if not opened all the time.

      aaah, okay. Yes, wine is fine, but that's not really what this video is about, it's about high proof spirits. High proof spirits will eat away at the cork and make it taste worse. So, the point is: you can't treat a bottle of tequila with a cork as if it was a bottle of Merlot.
      It may take a long time, but why would I take that risk? I have some bottles that are 11 years old, that's a long time for a bottle of alcohol. I have some corked bottles as well and they're not oak aged product for the most part (which usually use plastic corks if anything at all for corking)

      That's a myth, UVA rays can indeed penetrate glass. They are slightly more blocked by brown glass or green glass (reason beer is often bottled in brown bottles). Your alcohol in your glass bottles (which are almost always clear) will take on UV damage.

      if it's a vodka product shipped by a manufacturer it's probably fine but may taste not nearly as vibrant. If it's homemade...your mileage may vary :)

      Thanks. I didn't feel I needed to call out all the alcohols under the specific umbrella of "alcohol", but this includes vodka, rum, whiskey, gin and tequila. It also includes moonshine, absinthe, liqueurs and such.

      if it's open then the oxygen's probably got at it, it probably won't have the vibrancy it once did and probably won't be that impressive.       The liqueur is really not nearly as good as a new bottle, also tested in that video.

      You said, "there's oxygen in it[bottle] even if it's unopened, so the time clock starts after it's been bottled".
      But as I am aware, standard bottling procedure for nearly everything, involves injecting a shot of CO2 or N2 into the head space to displace atmospheric air(containing O2) before sealing. There shouldn't be O2 in the head space in an unopened bottle. Were you referring to the tiny fraction diffused into the liquid? Surely that minuscule amount would be negligible, since aging in casks tend to improve the flavor, and if the diffused O2 were to react, it would have reacted then.

      I don't know, was it there when you bought it? Gin is usually pretty clear, I'd not drink it myself :) Probably won't kill you, but probably aren't flavor crystals :)

      @@cmcocktails i bought it in september 2018 and opened the same month .the deposit is inside the bottle since december and the same deposit is inside a bottle of cruzan single barrel extra aged rum . my alcohol collection was 1 feet away from my 40inch t.v maybe its a reaction because of the heat made by the t.v .

      Heat does not cause alcohol to grow deposits, it will, at worst burn off some of the alcohol and make it less potent. Is it anywhere near a window?

      the only light bulbs that make UV light, I believe, are grow lights, so probably not. Keeping alcohol out of the sun is important, even without UV the warmth can make the alcohol vaporize faster. UV will damage it. None which creates discoloration or floating, especially in such a short time.
      You live in an area with a lot of fruit flies? Not sure if that would be what you see in there, but that's all I can think of

      unfortunately unless people send me stuff like that, it's never gonna happen. I don't have access to all the spirit brands of the world, unfortunately, that's just not how it works. But, many brands can send me their products directly, but done are the days I go begging them to give them free exposure :)

      People are pretty good at telling when something is normal, not everyone can tell what specifically makes something bad/broken/wrong. In the end, that doesn't really matter, as long as they can tell you it's not right. A great survival technique to keep humans from consuming something deadly that isn't how it should be, but it works for other things as well.
      This occurs visually as well, the Uncanny valley is a great example, where Robot's made to look human are just not quite right, but you can't tell why...but you feel awkward revulsion for it. We really don't need to know specifics when we're darn good at saying "that's just off."
      A co-worker of mine shaved his beard...it took me a few hours of seeing him in the halls thinking "something's 'off' with that dude" to realize "oh! you shaved your beard." But, because I didn't see it doesn't mean I'm a complete idiot that can't describe anything. :-)

      I'd say probably very few. How many alcoholic's do you know that take the time to learn, make cocktails and understand the craft? The ones I've known hide a bottle of vodka under the seat so nobody can find it and take it out for a swig when they're too sober. It's a disease more than an obsession.
