  • What happens to alcohol over time when left on your shelf, in a dark place without any UV destroying light? It still goes bad. Time is the killer of all things, including your tequila flavors.
    We have a 5+ year old bottle of tequila, a 7+ year old bottle of raspberry liqueur and we're going to compare to see if they go bad over time. Of course, we also want to the degree of bad taste so we'll compare against a fresh bottle recently purchased.

      @@jamalanewpizza6334 A lot of younger kids try to replace the alcohol they drank by putting water back into the bottle. You know, 'cause when you're a kid you think you know everything until life happens.

    I fell down the collecting rabbit hole a few years back I had 40+ bottles and I never cracked into half of a single one. I've learned my expensive lesson and I have only focused on a handful of bottles and I'm gonna leave the Hobby to the professionals.

    A little info from Belgium : you can stop the oxydation by injecting a neutral gaz inside your best bottles (Coravine and WinesaverPro, I've used both), the air is flushed out and your booze is protected. I use that on the most expensive of my single malts and r(h)ums.

      Yeah, but better than losing a Bruicchladdich Black Art, Octomore, Highland Park 17 Ice edition, Yoichi 20 years or Ardbeg Lords of the Isles... considering I've got quite a few high value single malts opened, the price of the system becomes a kind of investment. For the standard stuff I use smaller bottles.

    In a word, its fresher. You might also want to mention the fact that alcohol content greatly affects loss or spoilage rate. For example 14% ABV wine spoils, sours much quicker then 95% ABV Everclear neutral grain spirit because of its near zero sugar, carb and starch content. Cork and plastic as related to use as a stopper are for the most part inert. Might do well to also mention the high evaporation property of alcohol and its relation to a sealed container or bottle and oxidation effect on flavour, et al. Argon is also heavier than air and also inert, somewhat like nitrogen. When you pour Whisky from an Argon preserved bottle, you also pour out the argon which must be replaced.

    Very informative. I recently made a killer boulevardier with Campari from the '60s--it was incredible and certainly wasn't stored properly. Could there be some exceptions with apertifs and such?

      nope, I doubt it. But, if you want things to taste awesome because of history, age, or story around them, they often do. The brain is fricken awesome.

    Nice video Derrick, very informative. I've been wondering this myself. I've got a few bottles that followed me interstate that haven't be used for almost a year. For me I have no problems going through the base spirits for cocktails, its more the more drink specific mixers or liqueurs that sit a bit longer on my shelf.

    You know what really doesn't go bad? Green chartreuse. Another reason why green chartreuse is so awesome they named a color after it.

    I assume this includes whiskey and bourbon too. I have a 35 year old bottle of old grand dad. I really don't care to drink it but it feels wrong to get rid of it.

    An opened bottle goes stale/off/weird over time? I dunno, but I never take that chance.

    Its a shame the older bottle has degraded so badly. The older raspberry labeling was so much better to look at than the new one. Would transferring the contents of the new product to the old bottle cause it to over aerate the alcohol and affect the flavor?

      Yeah, it probably would, you're exposing it all to oxygen. Probably nothing that is going to do immediate damage, but it takes awhile to finish a bottle of raspberry liqueur...so the more time the better. And, I really don't care about the bottle design, it's in the back of my cabinet anyway.

      I serve quite a few college age women and gay men. Unfortunately, they are visually driven and that drive increases with the level of alcohol in their system. That's why I was so interested in the labeling, but the secondary question was of personal interest. I am sure that somewhere in your collection that there are bottles that are just ungodly annoyingly shaped and transferring to a more shelf-able bottle would be beneficial.

      I have many bottles that drive me nuts (Virus Vodka is one of the worst), my solution is to use them first and get rid of them faster so I can make more optimized space. This is a larger problem with the bottle is definitely a company issue, if it doesn't fit well at the bar that's a problem, if it's not visually appealing enough that's also a problem.
      The answer for me is to not put a lot of effort into buying bottles that are too hard to work with and favoring others.

      yep, you can use that, it basically "shortens" the bottle to whatever is in it and pushes the oxygen out.

      All products are going to go through the same process, and soften over time. Tequila just happens to be the worst of the offenders here, going bad faster than others. I know my Ol' Smokey Moonshine went bad, I already tossed it out because I left the speed pourer on it for a few years and it tasted like water (all the alcohol was pretty much gone).
      I don't know if I have any old whiskey at the moment that I can compare against, I'll have to see.

    I have a bottle of tequila that was given to me for my 40th birthday, it is now 26yrs. old and never opened nor seal broken. Black specs have formed inside; is it still good to drink?

    I noticed your Cherry Heering in the back. Had one of those go bad. Went from the vibrant burgundy red to brown. Tasted shit as well.

    Does Campari go "bad" too? I tried to make a Negroni recently and it turned out horrible.. now, granted, it may just really not be my thing.. but I keep wondering whether the Campari maybe was simply too old or I've used the wrong kind of Vermouth...

      if anything it would lose its vibrancy and bitterness, but I highly doubt it. It's not campari...it's you :) And that's not that abnormal a reaction :)

      That probably depends on how it was stored and the length of time you're talking. More than likely it's going to last a long period of time (especially if it's not using a traditional cork). But, if you're a collector you probably know more than I do about collecting spirits. I'm really here to talk to the consumer, who probably buys expensive stuff but still wants to savor it a bit over time but not stare at the full sealed bottle :)

    How's about the flavor being diff due to different batches? Years apart,perhaps like wine from the same vintor,but different vintages. I suppose storage conditions can also affect degradation...

      if its a batched product that has the "single batch" or batch # maybe, but most products don't do that (esp. liqueurs).

      I heard them called "Bail-top" whenever this type of top came up in kitchen goods or homebrewing supplies.
      Grolsch with bail-top bottles isn't available in my neck of the woods, now, but there's a brand of vodka available at the store where I work called 360 that use them. Lots of folks keep the bottles for salad dressing or whatever.

    What about unopened bottles? And is thee a good way to store them to help the unopened ones last longer? I like to collect things, and buying up a stock of various alcohols to have over time much farther in the future and while I can still get specific ones is something I would like to do.

      Open bottle don’t really go bad. Alcohol is a preservative. That all being said an open bottle that isn’t properly sealed can cause evaporation which will lower the total alcohol, may alter the taste and change the color when oxygen hits it.
      The lower the bottle gets the more oxygen is inside which may impact taste over time, especially with tequilas. If you like to collect buy smaller bottles to transfer the product to as consume it.
      Or buy two bottles, drink one and never drink the other :-)

      okay, so ... based on my personality and show content, it's always possible that I said that, however, in this specific case that's not true. I believe "vegetal" as in having flavors of earthy/mineral/veggies
