    I was never a fan of mushrooms but I learned from watching your channel that the reason I didn't like them was the texture from the water content. I tried cooking them with your technique and making sure that all the water is cooked off and it completely changes the texture. I am now learning to love mushrooms thanks to you!

      Yessssss, Angelo! There are so many of us that feel/felt the same way about mushrooms because they were always presented either raw and sliced up on salads or just slimy things that weren't very pleasing to eat. So glad that you gave them a try this way...such a game changer!!

      Slow and steady broiling is the thing I do with crimini mushrooms, after I had cut them in smalish pieces, that works great to ^^
      Or coating oystermushrooms in chickpeaflour batter where you had added a good amount of spicies and some oil and than brake them across in the oven, it is great ^^
      I am very knew in my mushroom love as well, those two are the ways I found to enjoy their taste without struggleing with their texture

      this is so true!! Most people never had properly cooked mushrooms and you have to get all of the water out of them to taste them.

    Dude, I made your garlic butter mushroom steak and gravy today. The complete meal, but I used extra large portabellas because that's all I could find in Georgia - it was FANTASTIC!!

    So I made this last night for my wife’s birthday dinner and had one friend that is in our circle over for dinner who is not vegan but probably 90% plant based. This dish was a hit! I didn’t have asparagus so I used broccolini I and the other half of the cauliflower and cooked it the same way you did the asparagus. This was so delicious and the potatoes were bomb diggity! You’re the best Derek! I never made this before but I’m always confident even if its the first time I’m making one of your dishes that it will be super good! It was gourmet!

      I appreciate that! It's very intentional that we leave in the hiccups and mistakes...primarily because I screw up all the time, but also for the exact reason you stated-we're all human, nobody's perfect and it's 100% okay to relax in the kitchen and go with the flow a bit. No need to pretend like we don't forget things, speak like a doofus sometimes or look silly! 🙃 All that really matters is not killing animals and cooking up some tasty food!

    Just cooked this for dinner. I don't think it lasted on my plate for longer than 30 seconds. It seemed complicated but once you broke it down it was pretty easy. Can't wait for the next time we cook it.

    you know, thing is that not only your recipes look phenomenal, but I also love how authentic everything looks and sounds.     I have tried many of your recipes and they are all so good but I have to say, this one, IS THE BEST. I was fortunate to have all the ingredients already, a great way to use up the half cauliflower I had and the few white taters I had. Thank you so much for sharing your delish and nutritious recipes with all of us. You're the best! (P.S. I would be lost without my vitamix and cast iron pans).

    Those steaks look so good. Long term vegan. 16 years. But I am always looking for inspiration to cook items I have not considered, or been intimidated by. I love that your recipes are so doable. If we want to win people over to eating plants, we need to give them great food, easily made.

    I recently combined regular potatoes with sweet potatoes, and we couldn't believe how much we loved it! It was just a very unique flavor combination, and I can't wait to try the cauliflower cream with it!

    this all vegetable recipe is everything i want in a sitdown dine in experience butter, garlic, searing, salt crust, pureed mash, charred greens, plant based cream wine herb gravy, without faux meat or cheese or processed flour coating that it usually takes for me to be on board. Its the most appealing fully plant I've seen that doesnt seem only veggies, but is. I appreciate that precision and variety.

    OMG! This looks amazing! I'm making the mashed potatoes tonight to top a shepherd's pie. I didn't have fresh cauliflower, so I used some frozen riced cauliflower, and it worked perfectly. Thank you for the amped up vegan mashed potatoes! You are the bomb!

    This is a great Sunday meal. I just finished eating it and it was DELISH. I added thyme to the mushroom gravy and it was awesome. Even my husband who doesn’t like mushroom enjoyed this meal. Next Sunday I’m going to try your country fried mushroom recipe. 😋

    Just started getting into these amazing edible mushrooms this past summer when my son came to visit. We are fortunate to have the Maine Mushroom Company and North Spore to get amazing varieties from. This recipe looks fabulous and will try as soon as my mushroom order comes in.     I often use mushrooms in lieu of meat (11 yr plant based vegan here) and I will try this for sure, but I just wanted to say, to add to the taste I will not boil my veggies but will steam them, and you should do it too and thank me later, seriously, boiling vs steaming is no contest, so tasty when steamed; but you Sir, have mastered the cooking creation!! Thank you!

    I just tried this after about 12 months of waiting to find an oyster cluster, apart from I burnt the first sear a little, (wiked hot was way less than I got my pan ;)
    This is literally nearly the best plate of food I have made in a long time, and I consider myself a pretty damn good vegan home cook!

    I made this entire dish. It was amazing and now a favorite. And the rue is perfect for anything. I cooked the mushroom steak a bit too long but everything was still really good.

    I would definitely add a pinch of nutmeg to these mashed potatoes but other than that, the whole dish is absolutely WICKED!
    Also, in my country the white button mushrooms are honestly THE MOST popular of all- you can buy the everywhere , unlike Portobellos which are very common in the US from what I have noticed :D

    Also Smallholds in Brooklyn are fantastic. The Blue Oyster kit gets so big the weight of them break off like giant glaciers in Antarctica.

      😂 couldn't resist the opportunity. I mean, blue oyster mushrooms?! That's all I can think of...well, besides how delicious this meal is. Now I'm hungry and smiling picturing Will Ferrell's gut spilling out of his shirt and everyone trying not to laugh.       @@DerekSarnoChef yup. I got gut game going on too since Covid. BTW, I made those mash potatoes with the cauliflower and... I had this squash green pumpkin thingy I got when I went pumpkin picking. It was hanging out in the kitchen for awhile. I did not know what to do with it. Well I improvised and boiled it with the cauliflower. Keeping the SNL theme going on, I will say this in the Christopher Walken voice. WOW WEE WOW WOW.!!! It was amazeballs.

    Skipped the potatoes, but used portobello for the steak. I seasoned the oil by adding garlic and onion and warmed it a bit. Really got the flavor inside the steak. Drizzled some of the remaining on the asparagus.

    If I don’t have these yummy mushrooms: I love a simple mushroom sauce based on coconut milk, vegetable bouillon powder and mushroom powder! I add different spices, black peoper and a little red chili flakes as well as worcestershire sauce and a little caramel coloring (until a very light brown sauce). Soooooo yum on all sorts of things, even a little whole wheat pasta turns heavenly with that sauce. Love to add some steamed carrots and spinach to it too... Mmmmmmm... 😋

    I made the potatoes and mushroom gravy and instead of mushroom steamed I used Beyond patties .. 👍👍👍

    Boy, I can eat this dish and only this dish any time. Thank you very much , Chef for showing us how to cook mushrooms. 😍🙏 Oyster mushroom is one of my favorite too, and I usually soak it in diluted tea and a bit of lemon juice (to take out the fishy smell LOL).
