    I love parsnip’s! Your right, I haven’t had them in many years. Guess I’m going out and get some and make this soup. I just finished canning 12 pints of onions and bell peppers, so……I’ll let you know how I like it. I know I will, I have all the ingredients. If you don’t use bell peppers, I have dehydrated yellow onions that I will use. I haven’t finished watching the video yet! Lol….

    Thanks for the recipe, I would leave out the chili and the heavy cream and would add a mild Paprika and Fromage Fraise as they are healthier.

    Love parsnips! Mom used to make them with butter and brown sugar. Kinda like glazed carrots. I like them roasted.

    I've eaten parsnips fried and added into soup, but never had it as the main vegetable in a soup. I'm going to have to try this version. Thanks for sharing. Happy holidays and joyous New Year.

    This looks absolutely delicious!! Question: I have a family member with a mustard allergy (can't have the greens or the seeds). Do you think prepared horseradish be a good substitute for the brown mustard?

    I’d never had parsnips. Don’t really know how they have escaped my kitchen and garden. What is the taste akin to?

      Hmm. They are kind of hard to describe. Maybe a cross between a potato and a mild radish. Not hot, but a slightly peppery taste.
