No-Knead Neapolitan Pizza Dough

  • This No-Knead Neapolitan Pizza Dough Recipe is prefect for anyone who wants to make a great pizza without all of the work and mess that comes along with kneading by hand or by mixer.

    380 G (1 2/3 c) Water
    .22 G (1/8 tsp) Instant Dry Yeast
    610 G (4 1/2 C) 00 Flour
    12 G Sea Salt (2 1/8 tsp)
    Mix the ingredients until they combine to a homogenous mass and cover in a container for 18 hours at room temperature. Divide the dough into 4 dough balls and proof for another 3 hours or cold proof for up to 2 days.

    I used this recipe just cut in half for 1 large, baked it on bottom rack 450 for 12 mins, best dough n pizza I've had at home

    Thanks for this. I had to uses bread flour, as I did not uave OO. In the past I have used half AP half bread.
    One thing that surprises me is how little yeat is needed.

    Great Video! Should'nt the mozzerelo go on the pizza before baking?

      Buffalo mozza is very soft and wet. If he would have put in on while it bakes the liquid from the cheese would separate and make a pool of water and they cheese would simple fall off. It's more of a finishing
      cheese. Best to use a pizza mozza that you can buy in any grocery store.

    Looks incredible. Love the new oven!!!! How long would you say the dough balls could cold proof for? 2-3 days?

      Thank you. 2 days seems to be the sweet spot. I have gone up to 3 days but the dough doesn't bake as nicely.

      @@weekendwarriorpizza1579 just had a pizza from this recipe. I gotta say, I’ve got about 5 VERY solid Neapolitan recipes that are absolutely solid as a rock. This may be my favorite when you factor in the ease of it all and the entire package. Great stuff. Thank you for sharing this one!

    I use Caputo 00 chef's flour, i hope i will achive the same result following this method! Only difference, is my Vevor electric pizza oven can reach 350 deg celcius, maybe up to 394( 662 deg farenheit max) won't cook in 2 min....maybe between 4 to 5 min.....😢

    Nice videos! I use an Ooni 12 pizza oven to bake my pizza. I already make pretty good doughs but the end result can be a little too chewy. How can I reproduce the very airy and soft texture that can be found in authentic Neapolitan pizza restaurants?

      the only way you can achieve that is by needing the dough . You can fold the dough in the container...quarter turns...do that every couple hours for 4 times...that should help.

      You can but it won’t cook as quickly and you won’t get the same kind of char. Stick around because I’ll have a whole series on home oven pizzas

      You can cook Neapolitan style pizza in a regular oven. It will get close, but it won't be quite the same since you can't get to 900ºF. You also need a pizza stone or steel. You also need to increase the hydration of the dough as it will stay in the oven longer than in a nice pizza oven as shown in the video. Good luck.

    Nice recipe but you should have went through the making of the pizza after you let it doubled in size.
